HOMEMADE HUMMUS

Steps:
- Put the chickpeas in a strainer and pick through to remove any small stones; rinse well.
- Transfer the chickpeas to a large bowl and add 8 cups water; stir in the baking soda. Set aside to soak at room temperature, at least 12 hours and up to 1 day.
- Drain the chickpeas and rinse well. Transfer to a large pot and add 10 cups water; bring to a boil and cook 5 minutes, then reduce the heat to low and simmer until the chickpeas are very soft, skimming off any foam from the surface, about 45 minutes.
- Reserve 1 cup of the cooking water, then drain the chickpeas and rinse under cold water. Transfer to a food processor and puree until smooth. With the machine running, add the tahini, olive oil, garlic, lemon juice, cumin, red pepper flakes, paprika, 1 teaspoon salt and the reserved cooking water; puree until smooth and creamy, about 5 minutes.
- Transfer the hummus to a bowl, drizzle with olive oil and sprinkle with paprika. Serve with pita bread and/or vegetables. To store, cover and refrigerate 3 to 4 days.

CHIPOTLE HUMMUS

- Put the garbanzo beans, chipotle adobo sauce, lemon juice, sesame paste if using and the garlic in a processor and blend until combined. With the machine running, add the olive oil until well incorporated.
- Transfer the hummus to a medium bowl. Season with salt and pepper. Drizzle with olive oil and a few drops of chipotle adobo sauce, and garnish with fresh cilantro. Serve with tortilla chips or crudites.

- Add red peppers, sun-dried tomatoes, cilantro, salt and pepper. Pulse process, using on/off turns, until coarsely chopped.
- Transfer hummus to medium bowl. Cover and chill until ready to serve. Bring to room temperature before serving. Accompany with warm pita or pita chips. Can be made 2 days ahead.allows flavors to develop!

- In a food processor, add the drained and peeled chickpeas, adobe pepper, adobe sauce, garlic, tahini, olive oil, water, lime juice, and salt. Process until the hummus is smooth. You might need to stop and scrape down the sides with a spatula and blend again.
- Taste and adjust seasonings, you might need to add more salt and lime juice. If the hummus isn't spicy enough for you, you can always add another pepper or more sauce. I keep it on the milder side so our boys can enjoy it, it still has plenty of chipotle flavor.
- To serve, put the hummus in a bowl and drizzle with a little olive oil and sprinkle with a little smoked paprika. Serve with pita bread, chips, crackers, or cut up vegetables.
