AAMRAS(MANGO PUREE) RECIPE
Aamras is nothing but the flavored mango pulp or puree. Aamras is popular in Maharashtra, Gujarat, and Rajasthan. The taste and flavor of Aamras totally depend on the type and quality of mangoes that you use. Alphonso or Kesar mangoes are suggested for Aamras preparation.

Steps:
- Wash and pat dry the mangoes.
- Peel them and roughly cut them into pieces.
- Discard the stone.
- Transfer mango pieces into the blender and add sugar.
- Blend it till you get a smooth puree.
- Add your favorite flavor as per taste.
- Blend it again for a minute and transfer it to the serving bowl.
- Serve chilled.

- Sugar -.
- sugar quantity is depending on the mangoes. If your mangoes are sour then you need more sugar.
- If mangoes are sweet then you need less sugar or sometimes no sugar.
- Milk or water-.
- Milk/water- it is up to your taste. If adding milk please careful not to thin out too much that it becomes drink.
- I usually do not add any milk or water because I like thick Aamras.
- Serving suggestions-.
- Serve Aamras with hot Poori or Roti.

MANGO MUFFINS
I was going to make blueberry muffins when I realized that the kids had eaten all my blueberries, so I used mango pulp instead. This fork tender muffin will be very moist. It would be more appropriate at the breakfast table than trying to toss it into a lunch box. I want to thank JeannineMarie in MN for the two most recent pictures that she sent me to include with this recipe.

Steps:
- Cut and peel two very ripe (soft to the touch) mangoes and reduce to soft pulp and juice. Combine flour, baking powder, salt and sugar in a large bowl.
- In a separate bowl combine oil, milk, and egg.
- Mix liquid ingredients with dry until just moist and stir in the mango pulp.
- Fill greased muffin tins, or paper muffin cups two-thirds full.
- Bake at 400°F for 15-18 minutes.
- They are done when they are brown on top and a tooth-pick inserted into the center comes out clean.
