- Preheat air fryer to 350°. In a small bowl, mix butter and peach preserves until combined; set aside., Sprinkle chops with seasonings. Place on greased tray in air-fryer basket. Cook until no longer pink, 2-3 minutes on each side. Remove and keep warm., Cut peppers into thin strips. Place on greased tray in air-fryer basket. Cook until crisp-tender and lightly browned, 5-6 minutes, stirring occasionally. Return chops to air fryer; top with butter mixture. Cook until butter is melted, 1-2 minutes. If desired, serve with rice.

No outdoor grill needed for these Jamaican-inspired jerk pork skewers! They cook up quickly in your air fryer while you whip up a mango and black bean salsa to serve on the side. Seasoning recipe makes about 1/2 cup and can be stored at room temperature for up to 6 months.

- Stir sugar, onion powder, thyme, allspice, black pepper, cayenne pepper, salt, nutmeg, and cloves together in a small bowl for seasoning mix. Transfer rub to a small airtight container, reserving 1 tablespoon in a bowl for pork. Add coconut to the remaining 1 tablespoon seasoning; stir to combine.
- Preheat the air fryer to 350 degrees F (175 degrees C).
- Thread pork chunks onto the skewers. Brush pork with oil, sprinkle all sides with seasoning mixture, and place in the air fryer basket.
- Cook in the preheated air fryer until an instant read thermometer inserted in the thickest part of the meat reads 145 degrees F (63 degrees C), 5 to 7 minutes.

- Place beef, jerky seasoning, and 2 tablespoons plus 2 teaspoons cure in a large bowl. Massage beef with your hands until evenly combined. Cover and refrigerate, 8 hours to overnight.
- Preheat the air fryer to 160 degrees F (70 degrees C). Place beef slices on the rack, making sure none are overlapping.
- Air fry for 3 hours. Open the air fryer and let beef sit for 1 hour for final drying and cooling. Store in an airtight container.

- Mix together the pork, jerk seasoning, allspice, chilli sauce, if using, lime zest and juice, and some seasoning. Thread the pork and pineapple onto metal skewers (or pre-soaked wooden skewers) and brush with the oil.
- Cook rice following pack instructions. Drain well, then put back in the saucepan with the beans, stir and keep warm.
- Meanwhile, heat a griddle pan until very hot. Cook the skewers for 3 mins on each side until nicely charred and the pork is cooked through. Serve skewers with the beans and rice, extra chilli sauce, if you like, and lime wedges for squeezing over.
