ALMOND TOFFEE SANDIES

Almond Toffee Sandies image

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until blended. Add eggs, 1 at a time, beating well after each addition. Gradually beat in oil and extract. Combine the flour, baking soda, cream of tartar and salt; gradually add to the creamed mixture and mix well. Stir in almonds and toffee bits. , Drop by teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Remove to wire racks to cool.

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the water and vanilla. Stir in the flour and pecans until well blended. Cover dough and chill for at least four hours.
  • Preheat oven to 325 degrees F (165 degrees C). Shape dough into walnut sized balls or crescents. Place 2 inches apart onto unprepared cookie sheets.
  • Bake for 18 to 20 minutes in the preheated oven, until golden. Roll in confectioners' sugar while still warm.

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in the oil, eggs and extract. Combine the flours, baking soda, cream of tartar and salt; gradually add to creamed mixture and mix well. Stir in almonds and toffee bits. , Shape into 1-in. balls; roll in sugar. Place on ungreased baking sheets and flatten with a fork. Bake at 350° for 12-14 minutes or until lightly browned.

  • In a mixing bowl, cream butter, oil and sugars.
  • Add in eggs one at a time, beating well after each addition.
  • Beat in extract.
  • combine flour, baking soda, cream of tartar and salt; gradually add to creamed mixture.

  • Bake for 10-12 minutes, or until golden brown.

Steps:

  • 1. In a mixing bowl, beat butter with an electric hand blender until creamed.
  • 2. Add about 1/2 the flour, all of the sugar, almond extract, and 1 tablespoon water.
  • 3. Beat until thoroughly combined. Beat in remaining flour (if dough is too dry, add a little more water).
  • 4. Stir in almonds.
  • 5. Shape into 1 inch balls. Place on an ungreased cookie sheet and lighly flatten with the palm of your hand.
  • 6. Bake in a 325 degree oven for about 20 minutes or until bottoms are lightly browned.
  • 7. Cool cookies on a wire rack.
  • 8. Gently shake cooled cookies in a bag with powdered sugar (if desired).

  • Set racks in middle of oven and preheat to 350°F. Line two baking sheets with parchment paper.
  • Combine all-purpose flour, whole wheat flour, baking soda, cream of tartar and salt in a medium bowl; mix well.
  • In the bowl of a mixer fitted with paddle attachment, cream butter, granulated sugar and Confectioners’ sugar until well combined, about 1-2 minutes. Scrape down sides of bowl with spatula, then add oil, eggs and almond extract; mix well. Add dry ingredients and mix slowly to combine. Stir in almonds and toffee bits.
  • Shape dough into 1-inch balls, roll in sugar, then place about 2 inches apart on prepared baking sheets and flatten with a fork. Bake, rotating sheets halfway through cooking, for 14-17 minutes or until lightly browned. Let cookies cool on baking sheets for a few minutes, then transfer to wire rack to cool completely. Store in airtight container.
