ALMOND BROWNIES

Steps:
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in chocolate syrup and extract. Combine flour and salt; gradually add to chocolate mixture., Pour into a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean (brownies may appear moist). Cool on a wire rack., For frosting, in a microwave-safe bowl, melt chocolate chips and 1 cup whipped topping; stir until smooth. Cool. Fold in extract and remaining whipped topping. Spread over cooled brownies. Sprinkle with almonds. Store in the refrigerator.,

TRUFFLE BROWNIES
Steps:
- Preheat oven to 350 degrees F.
- Using a hand held electric mixer, beat the eggs and salt together in a large mixing bowl until frothy. Add the sugar and beat until the eggs are thick and pale yellow, about 2 to 3 minutes. Add the vanilla extract and beat an additional 30 seconds.
- Put the margarine and chocolate in a microwave safe container and microwave on high for 1 minute. Stir to insure that the chocolate has melted. Microwave an additional 30 seconds, if needed.
- With the mixer running, pour the melted chocolate into the egg mixture. Add the flour and beat 1 minute. Scrape down the sides of the bowl and beat an additional 30 seconds.
- Spray the cake pan with a pan release spray and pour in the brownie batter. Place the pan on the top rack of the oven and bake 15 to 20 minutes until the center is barely set.* Remove the pan from the oven and let cool. Top with the ganache and place in the freezer for at least 1 hour.
- To serve, remove from freezer and slice immediately. Allow to come to room temperature before serving.
- Put the chocolate chips and cream into a microwave safe bowl. Microwave on high for 1 minute. Remove the bowl and stir with a whisk or fork until well mixed. Use immediately. If using the ganache later it will need to be reheated.
ALMOND TRUFFLE BROWNIES
This wonderful recipe is one my mom just had to share with me after she baked them. These fudgy almond delights are made in several steps, but the extra effort is well worth it!

- In a large bowl, combine the first six ingredients. Pour into a greased 13x9-in. baking pan. Bake at 350° for 23-25 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool on a wire rack. , In a microwave, melt chocolate chips; stir until smooth. In a large bowl, beat cream cheese and confectioners' sugar until smooth. Beat in the milk, extract and melted chips. Spread over brownies. Refrigerate for 1 hour or until firm. , For topping, in a small saucepan, melt chips and cream over low heat, stirring occasionally. Spread over filling. Sprinkle with almonds. Refrigerate at least 1 hour longer before cutting.

This is from T.O.H. web site and starts with a brownie mix and you can't tell. Do yourself a favor and try it, but don't use imitation almond extract use the real stuff.

- In a large bowl combine the brownie mix, water, vegetable oil, egg, chopped almonds and almond extract.
- Pour into a greased 13 x 9 pan and bake for 23-25 minutes or until toothpick inserted near the center comes out clean.
- Don't overbake.
- Cool in pan on wire rack.
- Filling:.
- In microwave, melt chocolate chips.
- Stir until smooth.
- In a large mixing bowl beat cream cheese and confectioners sugar until smooth.
- Add milk, almond extract and melted chips.
- Mix well.
- Spread over brownies.
- Refrigerate for 1 hour or until firm.
- Topping:.
- Melt chocolate chips and cream over low heat. Stir until melted.
- Spread over filling.
- Sprinkle with almonds.
- Refrigerate for 1 hour before cutting.

TRUFFLE-TOPPED AMARETTO BROWNIES

- Heat oven to 350'F Grease 13x9-inch pan.
- In large bowl, combine all brownie ingredients. Beat 50 strokes by hand.
- Spread batter in greased pan. Bake at 350'F. for 26 to 33 minutes or until set. DO NOT OVERBAKE. Cool completely.
- In small bowl, beat cream cheese and powdered sugar at medium speed until smooth.
- Add melted chocolate chips and 2 to 3 tablespoons Amaretto; beat until well blended.
- Spread filling mixture over top of cooled brownies.
- Refrigerate at least 1 hour or until firm.
- In small saucepan over low heat, melt l/2 cup chocolate chips and whipping cream, stirring constantly until smooth.
- Carefully spread evenly over chilled filling.
- Sprinkle with sliced almonds; garnish with candied cherries.
- Refrigerate at least 1 hour or until set; cut into bars.
- Store in refrigerator.
- TIPS: * if using almond extract instead of Amaretto, increase water in brownies to 1/2 cup; use almond extract and 2 tablespoons milk in filling.
- ** To toast almonds, spread on cookie sheet. Bake at 350'F. for 5 to 10 minutes or until light golden brown, stirring occasionally. Or, spread in thin layer in microwave-safe pie pan. Microwave on HIGH for 3 to 4 minutes or until light golden brown, stirring frequently.
