My mom was recently diagnosed with congestive heart failure, so I have been trying to come up with recipes that she can have (she is on a restricted sodium diet) that are still flavorful.

Steps:
- Saute onion, celery and carrot in olive oil until tender; cool slightly.
- In large bowl mix all meatloaf ingredients together with hands. Shape into loaf and place in baking pan.
- Combine sauce ingredients in small bowl; spread over meatloaf.
- Bake in preheated 350° oven for 1 hour.

- Preheat oven 350 degrees F. Sautee the onions, peppers, carrot, parsley, thyme, sage, and garlic until soft and translucent. Take off heat and let cool enough to handle with your hands.
- Beat eggs slightly and add to meat along with the flaxseed meal, Worcester sauce , salt, and pepper.
- Mix in the sauteed veggies by hand folding it together, not squeezing it thru your fingers.
- Form into a loaf on a baking sheet or pack it into a loaf pan then turn it out onto a baking sheet. Bake for 50 minutes and test for doneness, check every 5 minutes until done (155 degrees F in the center).
- Remove from oven and let rest under a foil tent for a minimum of 10 minutes.

LOW SALT MEATLOAF
This is a great low salt recipe. It has a hearty beef flavor with a twist. This is moist yet fairly dense meatloaf which is great the next day for sandwiches.

Steps:
- Preheat oven to 375 deg.
- mix topping ingredients and set aside.
- Beat the eggs and place in large bowl.
- Add remaining ingredients and mix thoroughly.
- Form into loaf shape of your choice and place into small lightly greased pan. I just used a 4x8 pan that was about 4 inches deep. Bread pan would work fine.
- Cover with foil and bake for 45 minute.
- Remove foil and coat top with the topping mix and bake for another 15-20 minute.
- All that's left now is to decide what to have with it. I like baked sweet potatos or garlic mashed potatos. If you like bell peppers these can be added for a great little south western taste. Using fresh onion instead of minced will make this a bit more moist but it is a preference thing. Enjoy!
SUGAR FREE MEATLOAF
I was having trouble finding a meatloaf recipe that fits into my no white sugar/no white flour diet, so I made one up. I adapted it from the "Netivot HaTorah Gatherings" cookbook recipe for "Turkey Meatloaf with Cranberry Glaze". My husband though it was funny that I was using the recipe but wasn't making anything in the title. You can obviously substitute turkey for the beef, and of course you can use regular matza meal or bread crumbs instead of whole wheat.

- Preheat oven to 350 F or 180°C In a large bowl mix the first 7 ingredients together with your hands until combined. Form meat mixture into oval (American football shape) or flatten into 9x13 pan. In a separate bowl, mix glaze and pour over meat. Try to make sure the glaze stays on the meat as much as possible if in football shape. Bake for an hour.
