SAVOURY AMARETTO CREAM SAUCE

A lovely sauce for pasta and chicken (or whatever you may like). Not for dieters, but worth every calorie! I love amaretto and looked high and low for a sauce recipe. I couldn't find any on Zaar that fit the bill so this one was created based on the few that I found from other online sources. It does not have an overwhelmingly amaretto flavour, but you will detect a hint of sweetness. Smells divine! Note: Cook time is approximate and your yield may vary, depending on how much you let it reduce after each addition.

Savoury Amaretto Cream Sauce image

Steps:

  • In a large frying pan over medium heat, sauté garlic and onion in oil until tender.
  • Add Amaretto, simmer till reduced by half.
  • Add chicken stock, simmer till reduced by half.
  • Add whipping cream, simmer till reduced by half or till desired thickness is reached.
  • Serve over chicken cutlets, pasta, etc, or put into a small pitcher on the table for guests to self-serve. Garnish each serving with fresh chives if desired.

1 tablespoon garlic, minced
2 tablespoons onions, minced
2 tablespoons olive oil
2 ounces Amaretto (di Saronno, etc)
2 cups chicken stock
1 1/2 cups whipping cream
2 tablespoons chives (optional)

Steps:

  • Mix together and put in the refrigerator for a couple of hours(if you have the time) so that the flavors can marry.
  • Garnish with slivered almonds.
  • Serve over fresh fruit.

3 cups sour cream
3/4 cup dark brown sugar
1/8-1/4 cup Amaretto
toasted and slivered almonds, garnish

AMARETTO SAUCE

This sauce is so YUMMY!! It was originally a topping for bread pudding(check out my recipe for that too!) but this is too delicious to hide in another recipe. I use it to top so many thing but my favorite is for ice cream! I also usually double the recipe.

Steps:

  • Put the amaretto, lemon juice, egg white and 4 tsp of the cherry syrup into a blender (you can also do this in a large cocktail shaker, you will just need to shake it very hard without adding any ice). Whizz up the mixture a few times at a high speed until it is pale and starting to increase in volume. If your blender is suitable for use with ice, add a few handfuls and pulse just twice more to chill the mixture. Alternatively, just stir in the ice until the outside of the jug feels cold. Pour into glasses and garnish with cherries to serve.

Sour cream crêpes with Seville orange marmalade & amaretto sauce image

Steps:

  • To make the pancakes, sift the flour into a bowl with a small pinch of salt and sugar and make a well in the middle. Crack the eggs into the well and whisk them into the flour. Mix the sour cream with 150ml water and pour this in too, whisking to incorporate until you have a smooth batter the consistency of double cream - add a splash more water or milk if needed. Leave to rest for 30 mins.
  • For the sauce, whisk the cornflour with the orange juice until smooth. Warm it in a pan, stirring to thicken, for around 2 mins. Add the marmalade, amaretto and lemon juice and cook for a few mins more. Gradually add the butter, whisking until you have a glossy sauce.
  • Stir the melted butter into the batter, then grease a non-stick pan and place over a high heat. Stir the batter, then ladle some into the pan. Swirl it around the pan and cook until it slips away from the pan when you shake it (a couple of mins). Use a spatula to flip the pancake and cook the other side until it comes away and is golden and caramelised in patches. Remove to a plate and keep warm, either covered in foil or in a low oven. Repeat with the rest of the batter until you have a pile of pancakes. Dust each one with a little caster sugar and top with the marmalade amaretto sauce. Fold into four, top with a bit more sauce, scatter over the toasted almonds and serve.
