ROLLED OAT COOKIES
I like to keep some of this dough in the freezer at all times since it's so handy to slice, bake and serve at a moment's notice. Steps:
- In a large bowl, cream butter and sugar until light and fluffy. Beat in water and vanilla. Combine dry ingredients; add to creamed mixture and mix well. Chill for 30 minutes. , Shape into two 1-1/2 in. rolls; wrap tightly in waxed paper. Chill for 2 hours or until firm. , Cut into 1/2-in. slices and place 2 in. apart on greased baking sheets. Bake at 375° for 12 minutes or until lightly browned. Remove to wire racks to cool.

AMISH BAKED OATMEAL

- Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
- Combine the oats and sugar in a medium bowl, then pour in the milk.
- Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
- Next comes the melted butter and the egg.
- Then just stir it all together into a big delicious oaty mess of wonder.
- Plop the mixture into the prepared pan and spread it out.
- Bake for 30 minutes, until set.
- Cut into squares while still warm. Serve with cream, brown sugar and berries.
AMISH BAKED OATMEAL
I got this recipe from a bed and breakfast in Amish country of Pennsylvania. My family is Pennsylvania Dutch, so we were out there almost every summer. It's a great, filling breakfast. Serve with fresh or canned peaches and a splash of milk or half-and-half.

These are fabulous...so nice to keep on hand.freeze well and you can have fresh cookies in a snap...I like to glaze them with a little powdered sugar and hot water and make a thin glaze and brush a little on tops of warm cookies..let set on rack till glaze is dry..the use of nuts and/or raisins is optional

- Mix all ingredients and form into several rolls.wrap in plastic wrap and refrigerate 1-2 hours or wrap in ovenwrap of aluminum foil and label and freeze.
- When ready to bake. slice into 1/4" slices.place 2" apart on greased cookie sheet and bake 15 minutes at 350°F.
- Glaze tops when warm.
- To prepare glaze.
- Mix powdered sugar and hot water to make a thin glaze.brush the tops of warm cookies and let set to dry -- .

AMISH OATMEAL COOKIES
My mom used to make these when I was growing up. I grew up in central Illinois close to an Amish community and mom somehow got this recipe. The original recipe called for beating with a "rotary" beater but of course we now use our mixers and to grind the raisins and peanuts in a food grinder!!

- 1. Preheat oven to 375.
- 2. Using your food processor, pulse raisins and peanuts until finely ground and set aside. Sift flour, baking powder, salt, nutmeg and cinnamon into a very large bowl. Cut in shortening using a pastry blender until mixture forms fine crumbs. (I have also put this in my food processer and done this.) Add ground raisin mixture, sugar and oats. Mix well.
- 3. Dissolve baking soda in buttermilk in a small bowl. Add molasses and 3 of the eggs. Beat with mixer on low until blended. Add to flour mixture, mixing well with spoon.
- 4. Drop by heaping tablespoons about 3 inches apart on GREASED baking sheets. Flatten each with a floured bottom of a drinking glass. Beat 1 egg in a bowl until blended. Brush tops of cookies with egg. Bake for 8-10 minutes or until golden brown.
