- In a bowl, mix the flour with the instant yeast powder, baking soda, orange zest and apple pieces.
- In another bowl whisk the egg, and add sugar, vanilla essence, yogurt and olive oil. Dilute with the juice of half an orange.
- Add egg mixture to dry ingredients and apple pieces and stir just until moistened. Batter should be lumpy.
- Spoon batter into greased or lined muffin cups, filling just below the top. Bake in the oven at 180°C for about 30 minutes or until lightly golden.
- Cool muffins on wire rack for about 5 minutes, then remove from the pan.

Cool for 5 minutes before removing from pan to a wire rack.

- Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
- In a medium bowl, combine flour, sugar, baking powder, orange peel and salt; mix well. In a small bowl, combine orange juice, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
- Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

- In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.
