APPLE CIDER BREAD OR MUFFINS
Great taste!This has been happily made and served for years,at a renowned inn,located in the Berkshire's of Western Massachusetts!Flavor improves if you bake the bread and let it rest for 24 hrs before cutting it.It's hard to resist tho!So enjoy!

- 1. Preheat oven to 375 degrees.Grease and flour either two loaf pans... or 18 muffin cups(I've used paper muffin tin liners without incident).
- 2. Cream butter with...ALL BUT ...1/4 c,of the sugar. Set this 1/4 c of sugar aside,in a separate small bowl,mixed with the final teaspoon of cinnamon listed last,for later use.
- 3. Add and mix well,the eggs to the creamed butter and sugar. Sift and add the remaining dry ingredients, alternating with the apple cider.Fold in the apples last.
- 4. Divide the batter for either loaf pans or muffins. Now take the sugar/cinnamon mix previously set aside in your small bowl,and sprinkle this atop of the loaves or muffins,before going into the oven.
- 5. Bake at 375 degrees...50-70 min's for bread.. OR for 30-40 min's for the muffins.A toothpick inserted in center apparently comes out clean when all is done. Once it's done,let's see if you can let it alone,for 24 hours,so as to improve it's flavor!Just sayin what the recipe says,folks!
CINNAMON STREUSEL APPLE CIDER MUFFINS
The streusel topping is what turns this from a good apple muffin recipe to a great apple muffin. The muffin itself is moist with a very mild flavor from the apples. But that streusel... oh my. Full of cinnamon, it bakes to a nice sugary crunch and really complements the apple flavors in the muffin. Just delicious!

- 1. How to Make it: Preheat your oven to 350° FOR STREUSEL: Stir brown sugar, flour, and cinnamon in small bowl. Cut in butter with a pastry blender. Set aside.
- 2. FOR MUFFINS: Lightly oil twelve 2 1/2-inch muffin cups or line with paper baking cups; or 6 Jumbo Muffin Cups set aside.
- 3. In a medium mixing bowl stir together flour, granulated sugar, baking powder, and salt. Make a well in the center.
- 4. In a small mixing bowl combine egg, apple,apple cider, and oil.
- 5. Add all at once to flour mixture.
- 6. Stir just till moistened. (The batter should be lumpy.)
- 7. Spoon about 1 tablespoon of the batter into each prepared muffin cup.
- 8. Sprinkle 1 teaspoon of the brown sugar mixture over each.
- 9. Fill with remaining batter. Sprinkle tops of muffins with remaining streusel.
- 10. Bake in a preheated 350° F oven until golden brown, about 20-25 minutes.
- 11. Remove muffins from pans; cool slightly on racks.

- Preheat the oven to 400 degrees F (200 degrees C). Grease the bottoms of 12 muffin cups or line with paper liners.
- Combine flour, white sugar, baking powder, cinnamon, nutmeg, and salt in a medium bowl; mix well.
- Combine apple cider, vegetable oil, and egg in another bowl; blend well. Add flour mixture all at once and stir just until moistened; batter will be lumpy. Stir in apples.
- Combine brown sugar, oats, pecans, and flour in a medium bowl for topping; mix well. Mix in melted butter until all ingredients are moistened and clumpy.
- Spoon batter into the prepared muffin cups, filling each 2/3 full. Top each with a generous amount of streusel topping.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 18 to 22 minutes. Let cool for 1 minute before removing from the pan. Serve warm.

- Preheat the oven to 350 degrees F (175 degrees C). Line 8 muffin cups with paper liners.
- Cream butter, shortening, and sugar in a stand mixer at medium-high speed. Add eggs, one at a time, mixing well after each addition and scraping down sides of the bowl as necessary.
- Whisk together flour, baking powder, cinnamon, salt, and nutmeg in a separate bowl. Turn the stand mixer on low and alternate adding in flour mixture and cider, starting with flour and ending with cider. Mix well and remove from stand. Stir in apples with a wooden spoon.
- Spoon batter into the prepared muffin cups, using about 2 generous tablespoons for each muffin cup.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Let cool before serving.
