- Preheat oven to 350°. In a large bowl, combine first six ingredients. Stir in cheese, ham and cranberries. Spritz one side of each wonton wrapper with cooking spray. Gently press into miniature muffin cups, coated side up. Spoon 1 tablespoon cheese mixture into each., Bake 10-14 minutes or until crusts are golden brown. Sprinkle with fresh chives if desired; serve warm. Refrigerate leftovers.

BAKED HAM AND APPLES
WHEN Mother wanted to serve ham, she went to the smokehouse, took one down from the rafters and sliced off as much as was needed. The rest was hung up again. - Place ham in an ungreased 13-in. x 9-in. baking dish. Rub with mustard and sprinkle with brown sugar. Core apples and cut into 3/4-in. slices; arrange in a single layer over ham. Dot with butter and sprinkle with pepper. , Cover and bake at 400° for 15 minutes. Reduce heat to 325°; bake for 45 minutes. Uncover and bake 15 minutes longer or until apples are tender.

- Heat one tablespoon butter in pan on medium-low heat. Add one slice of bread to the pan and top with two slices of the cheese, all of the ham and apples and then top with the additional cheese and the other slice of bread. After about three or four minutes, pick the sandwich up with a spatula and melt the remaining one tablespoon of butter. Flip the sandwich over to grill the other side. Check after about three or four minutes to make sure it's not over-browning. Flip again and cover with a large lid until the cheese is melted and the sandwich is warm throughout, about two more minutes.
RUSTIC APPLE TART

- Preheat the oven to 350 degrees F.
- Toss the apples, sugar, cinnamon, allspice, and salt together in a large bowl.
- Roll the pastry, on a lightly floured surface, into a 12-inch round. Line a baking sheet with parchment paper and spray with cooking spray. Arrange the pastry on the baking sheet. Put the apple mixture in the center of the pastry and spread evenly to the edges, but leaving enough dough to fold over to create a crust on the rim. Brush the crust with melted butter and drizzle the remaining butter over the apples.
- Bake until the crust is golden brown, about 40 minutes.
- While tart is cooking, put the peach preserves into a microwavable bowl and microwave until syrupy, about 20 seconds.
- Remove the tart from oven and brush with the warmed preserves. Pull the parchment paper off the sheet tray and transfer the tart to a wire rack to cool. Cut as desired and serve.

- FOR THE PASTRY: In a food processor combine flour, sugar, baking powder, pepper, and the 1 teaspoon salt; cover and pulse with a few on/off turns to combine. Add the 1 1/2 cups butter; cover and pulse with several on/off turns until the largest pieces of butter are no bigger than a small pea (about eight 1-second pulses). Add cheese; cover and pulse with a few on/off turns to work it inches Add egg yolks; cover and pulse with a few on/off turns to combine.
- Transfer the mixture to a very large bowl. Gradually add 1/2 cup of the ice water, stirring with a fork until combined. Squeeze a small handful of the dough together (it should easily hold together without crumbling apart). If necessary, add enough of the remaining 1/4 cup ice water, 1 tablespoon at a time, until dough holds together, stirring between additions. Gather mixture into a ball, kneading gently until it holds together. Transfer to a cutting board; cut into six equal portions. Place each dough portion on a sheet of plastic wrap; fold the plastic wrap tightly over the ball. Pat each plastic-wrapped dough ball into a 4-inch disk. Chill for 1 hour to 2 days.
- FOR THE TARTS: place apple slices in a large bowl. Add the 1/4 cup melted butter, the apple jelly, and lemon juice; toss to combine. Line two extra-large baking sheets with parchment paper; set aside.
- On a well-floured surface, roll a pastry disk to a 9- to 10-inch circle, about 1/4-inch thick. Spread 1 1/2 teaspoons of the mustard over dough circle. Overlap two slices of the ham in the center of the dough circle; arrange one-sixth of the apple mixture over the ham, making sure to leave a 3-inch border uncovered. Fold dough edges over apple slices, loosely pleating the dough and leaving apple slices uncovered in the center. Using a spatula, carefully transfer the tart to a prepared baking sheet. Repeat with the remaining dough disks, mustard, ham, and apple mixture, placing three tarts on each baking sheet. Cover and chill for 1 hour.
- Arrange one oven rack in the upper-middle position and another oven rack in the lower-middle position of the oven. Preheat oven to 375°F.
- In a small bowl beat together egg, the 1 tablespoon water, and the pinch salt. Using a pastry brush, brush the egg mixture over the edges of each tart. Bake in the preheated oven for 35 to 40 minutes or until the dough is golden and the apples are tender. Cool slightly on wire racks. Serve warm.

- Heat the oven to 350°F.
- Roll the pastry from one side to make a rough square, then quarter to make four smaller squares. Prick all over with a fork, transfer to a baking sheet and bake for 15 mins until puffed and golden.
- Meanwhile, fry the zucchini in the oil until soft and golden, stirring in the garlic for the final minute.

- Grease and line with parchment a 9 in springform pan or loose bottomed flan pan.
- Sift together flour, baking powder, salt and brown sugar.
- Stir in pecans, apples and raisins.
- Stir till combined.
- Beat eggs and add oil to them.
- Mix into dry ingredients.
- Incorporate fully.
- Put ½ of the mixture in the pan and flatten.
- Layer with gouda, then the other half of the mixture.
- Be sure to go all the way to the edges of the pan.
- Bake for 45 min or until golden brown and firm.
- Cool slightly, then serve warm.
