APPLESAUCE MOLASSES CAKE - LOW-FAT, DAIRY-FREE & GLUTEN-FREE
A moist, delicious spice cake that also happens to be low in fat and free of gluten and dairy. If you use another GF flour mix make sure it contains adequate amounts of guar gum or xanthan gum to help the cake rise. Kosher: Pareve.

Steps:
- Preheat oven to 375 degrees.
- Sift dry ingredients together in large mixing bowl, combining thoroughly.
- Blend wet ingredients in a separate mixing bowl.
- Add wet ingredients to dry ingredients slowly while beating with electric beater or large whisk. Beat thoroughly, until smooth.
- Spray 9" round cake pan or 9x13" baking pan with baking spray. (For easier removal of cake from pan, place parchment paper on bottom of pan before spraying). Pour batter into cake pan.
- Bake cake for 30-35 minutes or until a toothpick inserted in cake comes out nearly clean.
- Remove cake from pan and place on cooling rack. Serve while warm.
- Optionally, the cake can be frosted with vanilla frosting or dusted with powdered sugar before serving.
GRANDMA'S ONE BOWL MOLASSES APPLESAUCE CAKE
My Mom has been making this for 20 years. This is a very dense, moist cake, maybe closer to a pound cake, but that's what I like about it. We added the raisins to the recipe, so you could omit them. I also like to add Walnuts, some day I may also add some coconut. This is great warm or cold.

- Preheat oven to 350 degrees F (175 degrees C). Spray an 8x4 inch loaf pan with cooking spray.
- Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
- Beat the eggs until light and add sugar twin. Add applesauce and vanilla.
- Add flour mixture and beat until smooth. Fold in raisins.
- Pour batter into loaf pan. Bake at 350 degrees F (175 degrees C) for about an hour, or until a toothpick inserted into cake comes out clean.

- PREP: Set out the cream cheese to warm to room temperature. Preheat the oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper -- otherwise your cake will likely not come out easily. Greasing and flouring the pan isn't enough -- this batter is sticky and needs parchment paper. Foil will affect baking, so I don't recommend foil.
- WET INGREDIENTS: In a large bowl, stir together the applesauce, coconut oil (measured when completely melted and then cooled back to room temperature See Note 1), large egg, vanilla extract, and brown sugar. Stir until completely combined and smooth.
- DRY INGREDIENTS: Add the baking soda, baking powder, salt, cinnamon, allspice, and nutmeg (you can use a little less or more, depending on your preference). Add in the oat flour. (See Note 2.) Add in the chopped pecans and raisins if desired. Mix ingredients until completely combined and smooth.
- BAKE: Transfer batter to prepared 8x8-inch pan. Bake for 28-33 mins at 350 degree F oven or until a fork when inserted comes out clean. Be careful to not-over bake, as it will make this cake less tender and less flavorful. Allow to cool completely before frosting.
