- In a large saucepan over medium heat, mix the orange juice, water, cranberries, sugar, apricots, raisins, and orange zest. Stir constantly until sugar has dissolved, about 5 minutes. - Sprinkle chicken with salt. In a large skillet, heat 1 tablespoon oil over medium-high heat and brown half of the chicken on both sides. Remove from pan; repeat with remaining oil and chicken., Add onion to same pan; cook and stir over medium heat 2-3 minutes or until tender. Stir in broth, cranberries, preserves and vinegar; return to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly reduced. Return chicken to pan; cook, uncovered, 4-6 minutes longer or until chicken is no longer pink, turning chicken halfway.

- In a medium bowl, mix together the apricots, cranberries, raisins, cinnamon, ginger, allspice, and cloves.

This recipe is from Ken Kostick's "3 Easy Steps to Great Meals" and is my favourite cranberry sauce to serve at Christmas. I leave it chunky, but Ken notes in his cookbook that you can puree it for a few minutes if you prefer a smooth sauce.

- In a large bowl, combine the cranberries, apricots, raisins and spices. Mix well, then set aside.
- Combine the water and sugar in the saucepan. Bring to a boil and reduce the heat to medium. Cook, stirring constantly, until the sugar is completely dissolved.
