ASIAN RICE-NOODLE SOUP WITH BOK CHOY

Ditch instant ramen in favor of this healthy noodle soup that's just as quick and so much more flavorful, thanks to fresh vegetables and Japanese miso.

Asian Rice-Noodle Soup with Bok Choy image

Steps:

  • Layer ingredients in a wide-mouthed heatproof container with a tight-fitting lid.
  • When you're ready to eat, fill the container almost to the top with water, seal, shake, remove the lid, and microwave for 2 minutes.
  • Season with salt, reseal, gently swirl, and enjoy.

1 ounce uncooked vermicelli rice noodles
1/2 cup very thinly sliced baby bok choy
1/4 cup frozen corn, thawed
2 button mushrooms, very thinly sliced
4 teaspoons miso paste
2 tablespoons very thinly sliced small sweet or spicy peppers
1 tablespoon very thinly sliced scallions, white and light-green parts only
Kosher salt

ASIAN-INSPIRED RICE NOODLE SOUP (MICROWAVE)

I was craving some kind of Asian-style noodle soup or bowl last night, but I didn't feel like going out. I LOVE the Macau shrimp noodle soup from the Elephant Bar restaurant, and tried to make a homemade version that tasted similar. The Elephant Bar's soup has a lot more veggies in it, but this is good for a quick noodle soup fix!

Asian-Inspired Rice Noodle Soup (Microwave) image

Steps:

  • Combine all ingredients, except Sriracha sauce, in a 2.5 quart microwavable bowl (I use a large, glass Pyrex bowl).
  • Microwave on HIGH for 15 minutes, or until noodles are soft and bullion cubes have dissolved.
  • Ladle into serving bowls, and season with Sriracha sauce (or any other seasonings you'd like).

3 ounces rice noodles, broken into about 2-inch pieces (like Thai Kitchen rice noodles)
12 -14 shrimp, cooked (medium-size, tail off, peeled, deveined, I used cooked frozen ones)
0.5 (12 ounce) bag broccoli cole slaw
2 chicken bouillon cubes
4 cups water
7 drops hot chili sauce, such as Sriracha (optional)

  • Bring water to a boil in a large saucepan. Break up the block of noodles and stir into the pot, reserving seasoning packet. Stir in chicken, bok choy, and carrot. Bring to a boil again, then reduce heat and simmer for 3 minutes. Stir in contents of seasoning packet and sesame oil.

  • Place all ingredients in water and leave to boil. If noodles stick out of water, this is ok as they will go limp and all be covered to cook as the water heats up.
