Steps:

  • Make the bacon jam: Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Remove to paper towels; pour off all but 3 tablespoons drippings from the skillet. Add the canola oil to the skillet and heat over low heat. Add the onion; cover and cook 10 minutes. Uncover and cook, stirring occasionally, until very soft, 10 to 15 more minutes. Return the bacon to the skillet; add the white wine vinegar and thyme and season with salt and pepper. Set aside.
  • Make the secret sauce: Pulse the mayonnaise, ketchup, sherry vinegar, Sriracha and garlic in a food processor until smooth; season with salt and pepper.
  • Make the burgers: Preheat a grill to medium high and brush the grates with vegetable oil. Form the beef into six 1/2-inch-thick patties; season with salt and pepper. Grill 5 minutes; flip and brush with the mustard. Grill 5 more minutes for medium rare, topping with the cheese in the last minute. Spread the sauce on the bottom buns; top with the burgers, bacon jam, pickles and top buns.

ASIAN STYLE BURGER BASH

This is my submission for the first Ready-Set-Cook in 2002. I admit the slaw on the burger seems a bit weird, but it's really great. The noodle salad is kind of a knock off of my favorite dish! All in all this was a pretty quick meal to make.

  • Add the protein of your choice to a large bowl. In a small bowl, whisk the Korean BBQ marinade mix with the sesame oil and soy sauce. Pour over the protein of your choice and add the onions and panko bread crumbs if using. Gently mix into the meat but don't over work it. Form four 1/4 pound patties or three 1/3 pound patties. Make an indent in the middle of each patty so they cook flat. Place on a platter and wrap in plastic wrap and refrigerate for 30 minutes or overnight.
  • To make the Spicy Asian Slaw, add the cabbages, green onion, carrot and red bell pepper to a large bowl. To a glass jar fitted with a lid, add the rice vinegar, gochuchang, oil, garlic, ginger and soy sauce. Shake well (or whisk if it doesn't incorporate) and pour over the cabbage mixture. Toss to coat and top with sesame seeds. Refrigerate for 15 minutes up to overnight.
  • When ready to grill, prepare an outdoor or indoor grill and lightly oil the clean grill grates. Cook the burgers undisturbed until browning at the edges and flip once. Cook until cooked through or internal temperatures read 145°F for fish, 155°F for ground meat, and 165°F for poultry. Toast the buns on the grill. Spread each side of the bun with aioli or mayonnaise and top with the burger. Add the Asian Slaw and Asian Cucumbers if desired, and top with more sesame seeds.

  • Combine garlic, chile, ginger, lemongrass paste, ground pepper and 1/3 of the shrimp in a food processor and puree, stopping to scrape down sides of bowl as needed. Add remaining shrimp, shallots, pepper, cilantro and fish sauce. Pulse to chop, but you still want chunks of shrimp. Shape mixture into 4 patties if you want slider sized. I used a 1/3 c measure and it made four. Chill for 20 minutes or longer.
  • Make sauce by wiping out food processor and combining all ingredients in sauce recipe in food processor. Blend well until mixture is smooth, scraping sides of bowl as needed. Set aside.
  • When ready to grill preheat grill so that it is moderately hot with rack about 4″ from heat source. Spray patties and pineapple with cooking spray on each side or brush well with oil. Cook until a dark crust appears on bottom and they release easily with a spatula, about 5-7 minutes depending on how fast your grill cooks. Flip and cook approximately another 4 minutes. Pineapple will cook sooner. Flip as needed and set aside when grilled.
