Steps:
- 1. Preheat the oven to 425F. Generously oil a cast iron skillet.
- 2. Mix first 5 ingredients together in a bowl.
- 3. Add the remaining 3 ingredients and mix well. (If you want to add jalapenos, green chile or bacon bits, do so now).
- 4. Pour into the cast iron skillet.
- 5. Bake 20-25 minutes. Remove from oven. Serve each slice with lots of butter!
SOUTHERN CORNBREAD, MILLIE'S
We love a good skillet of old fashioned, Southern cornbread. This cornbread is sweet and moist, and not at all dry. It is delicious with just a pat of fresh butter and darn right fantastic in a bowl of beans ! Your family is sure to love this recipe.

- In an 8 inch skillet add 2 tbsp. bacon grease. Use a paper towel or brush to coat the sides of skillet. Put it into oven and turn on to 350 degrees. Pre-heat for 10 minutes. ( You can cheat and put skillet on top of stove and heat till hot, but not smoking.) Heating the skillet forms a nice crust.
- In a medium bowl combine cornmeal mix, flour and sugar. Mix it up. Now add buttermilk, beaten eggs and oil and stir to mix well.
- Pour into hot skillet. Put into oven and bake 18-20 minutes @ 350 degrees. Do not over-bake as that will make it dry ! Remove from oven and slice into 6 even pieces.
- Serve with a pat of fresh salted butter, if desired. Enjoy !
CORNBREAD DRESSING

- Preheat oven to 375 degrees F.
- In a large skillet over medium heat, melt 2 tablespoons of the butter; add the onions and season with salt and pepper, to taste. Cook, stirring often, until light golden, about 6 to 8 minutes and remove from the pan to a small plate. Raise the heat to medium-high and add the water, scraping up the brown bits from the bottom of the skillet and allowing the water to simmer just a couple of minutes to infuse in the onion flavor. Remove from the heat.
- Put the cornbread in a large mixing bowl. Melt the remaining 6 tablespoons butter in a small pan over medium heat and let it bubble until the milk solids to start to turn golden. Add the sage leaves and briefly fry until beginning to crisp, about 30 seconds. With a slotted spoon, remove sage and put on top of cornbread to drain and crisp. Remove the butter from the heat. Add the eggs and cooked onions to the cornbread and pour the browned butter over the mixture. Season with salt and pepper, to taste. Add the onion infused water, a tablespoon at a time, gently folding, until cornbread is evenly moistened but not soggy. Pour the dressing into a 9 by 11-inch baking dish and bake in the preheated oven until the top is golden brown in color and the dressing is set in the middle, about 30 minutes.
EASY SPELT CORN BREAD
This is based from the Aunt Jemima's recipe, but I modified it to be dairy free and with spelt flour.

AUNT CLAIRE'S CHOP CHAE (JOP CHAE)
Korean noodle with beef and spinach dish. Aunt Claire made this for large family gatherings (recipe times 4), add mixed it in 5 gallon buckets. She got this recipe from her sister in law Kim from Korea. Aunt Claire served this with Pul Gol Gi (grilled marinated sirloin beef -recipe also posted) The family looked foward to these events. - Blanch spinach in boiling water for 3 minutes. Drain. When cool squeeze out excess water,set aside.
- In large dutch oven fill 3/4 full with water. Bring to boil, remove from heat. Add Korean vermicelle to water and set aside for 10 minutes. Drain and rince with cold water. Cut into about 4 inch long pieces.
- Cut onions into 1/8 wedges, separate pieces.
- Slice sirloin tip into strips 2 inches long 1/4 inch thick (partially freeze to make slicing easier).
- Mix soy sauce, pepper,sesame seeds, sesame oil, brown sugar and garlic powder. set aside.
- In large wok or skillet, heat 2 tablespoons of peanut oil (adding more as needed when stir frying) over high heat.
- Stir fry each ingredient seperately- carrots,mushrooms,onions and beef .Add all into very large bowl after stir frying.
- Add vermicielle and spinach to bowl with stir fry ingredients.
- Pour soy sauce mixture over and mix well.
- Serve at room temperature.

- Preheat oven to 350°F Grease 8-inch square baking pan.
- Combine flour, sugar, corn meal, baking powder and salt in medium bowl. Combine milk, eggs, oil and butter in small bowl and mix well. Add to flour mixture and stir just until blended.
- Pour into baking pan. Bake for 35 minutes or until wooden pick comes out clean.
- For corn muffins, spoon batter into muffin cups 2/3 full. Bake for 18-20 minutes or until wooden pick comes out clean. Cool for 5 minutes before removing from pans.
FANNY FARMER CORN BREAD
This came from my first, and most favorite cookbook. It makes a slightly sweet cornbread, which I adore. My hubby won't eat sweet cornbread, though, so I adapt it for him by leaving the sugar out. You can also make this recipe with buttermilk, by adding a 1/2 t. of baking soda along with the other ingredients. I'm posting it here so that I can access the recipe when I am away from home and don't have my book. (I also usually grind my own flour and cornmeal, and it still makes great bread!)
