ASTURIAN BEAN AND SAUSAGE SOUP

Asturian Bean and Sausage Soup image

Steps:

  • Put the beans, ham hock, belly pork rib, blood pudding, and chorizo into a pot and cover with water. Skim as the water comes to the boil and cook for 1 hour or until the beans are almost tender.
  • Cut up the cabbage quite finely. Drain.
  • Remove the meat bones returning any shreds of meat to the pot and slice the sausages. Season with plenty of black pepper and salt to taste. Add the cabbage and potatoes, and more liquid if necessary to cover them comfortably. Simmer until the potatoes are tender and check the seasoning. If your chorizos are not very spicy, you could add some paprika. Serve in big bowls with country bread.

Steps:

  • Heat the oil in a large pot over medium heat. Add the sausage and stir-fry for 3 minutes, breaking it up as it cooks. Add the onion and celery and stir-fry for 5 more minutes. Add the chicken stock, bring to a boil, decrease the heat, and simmer for 10 minutes. Add the bamboo shoots, mushrooms, and coconut milk. Simmer for 2 more minutes. Add the lime juice and taste for salt and pepper. Serve garnished with green onions and cilantro leaves.

1 tablespoon peanut oil
1/2 pound Thai Chicken and Turkey Sausage, removed from casings
1/2 cup chopped onion
1/2 cup thinly sliced celery
6 cups chicken stock
6 bamboo shoots, diced
10 medium-sized fresh mushrooms, sliced
1/2 cup coconut milk or condensed milk
1 tablespoon fresh lime juice
Salt and freshly ground black pepper
1/4 cup chopped green onions or scallions, white and green parts
Cilantro leaves

Steps:

  • Rinse the turkey giblets and turkey neck. Place in a medium sauce pot and cover with cold water. Over medium low heat, simmer the giblets for 1 hour. Set aside.
  • Preheat oven to 325 degrees F.
  • Place the vermouth in a small saucepan and bring it to a simmer over high heat, then turn off the heat. Add the sultanas to the vermouth and let them soak for 10 minutes.
  • Place the potatoes in a large pot of cold water and bring to a simmer over medium heat. Once fully cooked, drain and cool on a baking sheet.
  • While the potatoes are cooking, cook the sausage in a large pan over medium heat. Add the celery and onion, cooking until the onions are translucent. Add the garlic and cook for 1 minute. Remove and set aside.
  • In a large bowl, toss the savory, thyme, oregano, sage, potato, bread crumbs, and sultanas. Add the sausage mixture, salt and pepper. Spread the dressing in a large glass baking dish. Drizzle the mixture with giblet broth. Cover with foil, and bake for 30 to 45 minutes.

1 cup red vermouth
1 cup sultanas or raisins
4 pounds Yukon gold potatoes, peeled and diced
1 pound 10 ounces breakfast sausage, crumbled
4 stalks celery, diced (about 3 cups)
2 small onions, diced (about 1 1/3 cups)
6 cloves garlic, finely minced (about 2 tablespoons)
1 bunch savory, leaves chopped
1 bunch thyme, leaves chopped
1 bunch oregano, leaves chopped
2 teaspoons sage, leaves chopped
4 cups bread crumbs
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper

Best potato soup with sausage ever with a variation of the original German soup. My family loves this soup and I never have leftovers. This recipe is one my grandmother used to make when I was growing up and I have always loved this.

Steps:

  • Heat a large pot over medium-high heat. Cook and stir Italian and kielbasa sausages in the hot skillet until browned, 5 to 7 minutes. Drain grease.
  • Stir potatoes, water, chicken broth, heavy cream, celery, bouillon, garlic, salt, pepper, garlic powder, and red pepper into the pot. Reduce heat and let simmer until potatoes are tender, about 1 1/2 hours.
