BAKED MEATBALLS
For a no-fry, homemade dinner, try Alton Brown's Baked Meatballs recipe, made with a mixture of three different meats and spinach.

Steps:
- Preheat the oven to 400 degrees F.
- In a large mixing bowl, combine the pork, lamb, ground round, spinach, cheese, egg, basil, parsley, garlic powder, salt, red pepper flakes, and 1/4 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated. Use immediately or place in refrigerator for up to 24 hours.
- Place the remaining 1/4 cup of bread crumbs into a small bowl. Using a scale, weigh meatballs into 1.5-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds, roll in the bread crumbs and place the meatballs in individual, miniature muffin tin cups. Bake for 20 minutes or until golden and cooked through.

- PREP/PREPARE
- Gather Your Ingredients.
- Add the butter and oil to a sauté pan over medium-low heat.
- After the butter melts, add the onions, and mushrooms.
- Cook over low heat until the onions soften, and begin to brown, about 30 minutes.
- Chef's Note: Let the onions and mushrooms slowly cook... Don't rush this step. That slow cooking is going to develop wonderful flavor.
- Whisk the flour, Worcestershire, cayenne, and garlic powder into the beef stock.
- Add the stock to the onion/mushroom mixture.
- Simmer until the sauce begins to thicken, about 8 to 10 minutes, and then add the meatballs, and allow them to heat up in the sauce.
- Chef's Note: At this point, taste the sauce and season (salt, pepper) to taste. Remember good chefs always taste their food.
- PLATE/PRESENT
- Serve while will warm over noodles, or some yummy smashed potatoes. Enjoy

AUTUMN'S POTLUCK MEATBALLS
I'd decided to make meatballs for a potluck lunch at work- but my small rural grocery store was out of chili sauce so I had to improvise. This recipe is what I came up with! If the resulting sauce is too tangy, feel free to add up to another 1/2 cup of brown sugar.

Steps:
- Mix the ground beef, egg, bread crumbs, parsley, onion, worcestershire, and horseradish. I used my kitchen aid and it worked very well.
- Form into 1" meatballs.
- Bake at 350 until done, about 20 minutes.
- Combine all the sauce ingredients in a small sauce pan, and heat until boiling.
- Put meatballs in crock pot and pour sauce over them. Keep on low.

Very tasty meatballs full of spice and sauteed to perfection. I usually serve mine with spaghetti, but I've also served them with a BBQ sauce and rice on the side.

Steps:
- Preheat oven to 375.
- Sauce: Combine tomato sauce, dry sherry, diced tomatoes, sliced mushrooms, cinnamon, clove, brown sugar, oregano, and basil in a sauce pot and bring to a simmer over medium heat. Reduce to medium low and allow to continue simmering for 30 minutes.
- Meatballs: combine meats, bread crumbs, crumbled mushrooms, spinach, Parmesan cheese, Worcestershire sauce, and egg in a mixing bowl.
- Mix with hands until well blended. (More bread crumbs may be added if mixture is too thin).
- Form 2-inch balls and place in an ungreased baking dish.
- Bake at 375 for 12 minutes.
- Turn and continue to bake for an additional 12 minutes.
- Pour sauce over meatballs and sprinkle shredded mozzarella over the top.
- Broil on high for 7-10 minutes (until cheese starts to brown).
