- In a bowl, beat eggs. Add milk, salt and pepper; stir in avocado. In a skillet over medium heat, melt butter. Add egg mixture; cook and stir gently until the eggs are completely set. Sprinkle with bacon.

I had these clever breakfast treats at a brunch gathering. They are easy to make for just two people or for a crowd. You can double or triple this recipe for a crowd. I use a muffin tin to hold each avocado half if I am making several of them.

- Preheat oven to 425 degrees F (220 degrees C).
- Place each avocado half in a ramekin. Crack 1 egg into each avocado half; season with salt, black pepper, and cayenne pepper. Place ramekins on a baking sheet.
- Bake in the preheated oven until entire egg is cooked through, about 15 minutes. Sprinkle each avocado with bacon and chives.

This is a great way to have eggs for breakfast-- had this type of egg when visiting my husband's cousin in Arizona- Dorothy gave me the recipe and now I am giving it to you- she got it from a friend of hers at church choir.

- 1. Heat oven to 425^. Cut avocado in half lengthwise and remove pit; if indenture is not deep enough cut out a bit of the avocado flesh to make enough room for the egg to fit easily.(Do not remove peel from avocado, just the pit).But do cut a small piece from the bottom so it sits upright and not spill out the egg.
- 2. Place avocado halves in a pie plate or baking dish. Crack one egg into each 1/2 of avocado hole. sprinkle on salt and pepper to taste. Bake for 15 to 20 minutes depending on how well you want your egg cooked. Serve with bacon bits and shredded cheese on the side at the table...these are so delicious. We also had garlic toast with this. This was really good and so different..I will make this again.

- Heat olive oil in a skillet over medium heat. Crack eggs into skillet; cook for 1 to 2 minutes. Flip and cook egg until done, 2 to 5 minutes more. Transfer eggs to a plate and season with salt and pepper.

- Heat a non-stick frying pan, very lightly brush the cut surface of the tomatoes with a little oil, then cook them, cut-side down, in the pan until they have softened and slightly caramelised.
