NO-BAKE AVOCADO CHEESECAKE
This easy no-bake dessert relies on the smooth, creamy texture of avocado to form a stiff, custardy base -- no gelatin required. Lime zest and juice add tang.

Steps:
- Spray a 9-inch springform pan with cooking spray. Add the graham crackers and 1/4 cup of the sugar to a food processor and pulse to fine crumbs. Drizzle in the butter and pulse until the crumbs are completely coated and moistened. Firmly press the crumb mixture into the bottom of the prepared pan. Refrigerate while you make the filling. Clean out the food processor and return it to the stand.
- Add the cream cheese, avocados, lime zest and juice and remaining 3/4 cup sugar to the food processor and puree until completely smooth and almost no avocado lumps remain. Add the coconut cream and heavy cream and process until the mixture starts to thicken and becomes creamy, about 1 minute.
- Pour the mixture on top of the crust in the prepared pan. Spray a piece of plastic wrap with cooking spray and gently press it on top of the filling so no air can reach it. Refrigerate until completely set, 6 hours and up to overnight.
- Remove the plastic wrap and smooth out any bubbles with an offset spatula. Garnish with whipped cream around the edge and serve cold.

- Soften gelatin in cold water for 5 minutes.
- Dissolve softened gelatin,in boiling water.
- Add lemon juice, hot pepper sauce, salt, pepper, and onion juice.

- Soften gelatin in cold water for five minutes.
- Add boiling water and stir until dissolved.
- Cool.
- When syrupy in consistence, add the remaining ingredients and mix thoroughly.
- Lightly spray your mold with cooking spray; pour mixture into mold.
- Chill until firm.
- Unmold and serve on crisp, cold salad leaves and dress with a good quality mayonnaise.

AVOCADO AND CRAB MEAT MOUSSE

- Split the avocados in half and remove and discard the pits. Cut away and discard the skins. Cut the flesh into cubes and put them in a bowl. Add the lemon juice and stir to coat the pieces so that they do not discolor. Set aside.
- In a small bowl, combine the gelatin and vinegar. When the gelatin is softened, scrape it onto the avocado.
- Put the avocado mixture and mayonnaise into the container of a food processor or electric blender and blend thoroughly. There should be about three cups.
- Scrape the mixture into a mixing bowl and add the salt, pepper, Tabasco sauce, mustard and anchovy paste. Blend thoroughly.
- Pick over the crab meat gently and carefully to remove all trace of shell and cartilage. Leave the lumps as large as possible. Add them to the avocado mixture and fold the crab meat in thoroughly.
- Brush a five-cup ring or decorative mold lightly on the inside with oil. Wipe out any excess oil.
- Pour and scrape the avocado and crab mixture into the mold. Smooth over the top. Cover and refrigerate overnight. Unmold and garnish the top, if desired, with a few tarragon leaves. Serve with tarragon sauce (see recipe).

- With vegetable peeler, remove strips of zest (yellow portion only) from lemon. Save lemon for another use.
- In small, heavy saucepan, combine milk, 1/2 cup sugar, vanilla and lemon zest. Set over medium heat and cook, stirring occasionally, until ring of bubbles appears around edge of milk, 5 to 6 minutes. Add gelatin to saucepan and simmer, stirring with a wooden spoon until gelatin has completely dissolved, about 1 minute. Pour mixture through strainer into bowl and set aside. Discard lemon zest.
- In food processor, pulse to combine avocados and cream cheese, 10 to 12 pulses. Pour in hot milk mixture and whirl until very smooth. Rinse 8 1/2 cup ramekins with cold water, pour out the water, but do not dry ramekins. Divide hot avocado mixture evenly amongst ramekins.
