BABY BAM

Emeril Lagasse's bam recipe for kids. He tells the fearless "bammers" to kick it up a notch by adding 1/4 teaspoon cayenne (or more to taste) to the mix. You can sprinkle this on lots of dishes or add it to recipes.

Steps:

  • Place the mushrooms in a large bowl of water and gently turn to remove any grit or dirt. Dry on a clean kitchen towel and set aside.
  • Cut the onion in half. Cut each half into quarters, keeping the pieces together as much as possible. Remove the upper fourth of the bell pepper. Remove the stem end, inside ribs, and seeds. Cut the pepper into quarters crosswise, then into 1-inch pieces.
  • Cut the meat into 1-inch pieces and place in a large glass bowl. Add the Baby Bam and toss to coat. Add the Worcestershire sauce, soy sauce, balsamic vinegar, vegetable oil, and garlic, and stir to combine. Cover tightly with plastic wrap and refrigerate for at least 2 hours and up to 4 hours.
  • Preheat the oven to 450 degrees F and place the oven rack in the top position. Line the baking sheet with aluminum foil.
  • Remove the meat from the refrigerator. Thread 1 meat cube onto a skewer, followed by a mushroom, bell pepper, and onion. Continue threading alternating ingredients onto the skewer until the skewer is full. Place the filled skewers on the baking sheet and bake for 10 minutes for medium.
  • Remove from the oven. With an oven mitt or tongs, hold one end of the skewer. In the other hand, with a fork, push the meat and vegetables from the skewer onto a plate. Repeat with the remaining skewers, and serve hot.
  • Combine all the ingredients in a mixing bowl and stir well to combine with a wooden spoon.
  • Store in an airtight container for up to 3 months.

Steps:

  • Position rack in center of oven and preheat the oven to 350 degrees F.
  • Heat the vegetable oil in a skillet over medium heat. Add the onion, celery, bell pepper, garlic, salt, basil, thyme, and black pepper. Cook, stirring, until the onions are soft and lightly golden, about 6 minutes. Remove from the heat and set aside to cool.
  • In a large mixing bowl, combine the ground beef, pork, and veal with a wooden spoon or with clean hands. Be sure to wash up afterward.
  • In a medium mixing bowl, combine the eggs, heavy cream, ketchup, Baby Bam, Dijon mustard, and Worcestershire sauce, and whisk to combine. Add the egg mixture to the meat mixture along with the cooled vegetables and bread crumbs. Mix with your hands or a wooden spoon until thoroughly combined.
  • Transfer the mixture to a 9 by 5 by 3-inch loaf pan. Using your fingers or the back of the wooden spoon, smooth the top into a rounded loaf shape. Wash hands again.
  • To make the glaze, combine the ketchup, brown sugar, Worcestershire, and hot sauce, if desired, in a small bowl. Stir to blend. Spread the mixture evenly over the top of the meatloaf. Bake the meatloaf for 1 hour and 15 minutes.
  • Using oven mitts or pot holders, carefully tilt the pan away from you and drain off the excess grease from the pan, An adult should help you here. Be careful, hot grease can really burn. Slice to serve.
  • Place all the ingredients in a mixing bowl. Stir well to combine, using a wooden spoon.
  • Store in an airtight container for up to 3 months.

Steps:

  • Position rack in center of oven and preheat the oven to 400 degrees F.
  • Line a large rimmed baking sheet with aluminum foil and place a wire rack on top.
  • Place the melba toast in a food processor and pulse to form coarse crumbs, about 3 pulses.
  • Transfer the crumbs to a large plastic resealable food storage bag and add the Italian Essence, 2 tablespoons of the Baby Bam, the garlic powder, Parmesan, and vegetable oil. Close the bag and shake to combine.
  • In a medium mixing bowl, beat the eggs and remaining 2 teaspoons of Baby Bam with a fork.
  • Using your hands, dip the pork chops 1 at a time into the eggs, then place in the bag, close, and shake to coat on both sides, pressing so that the crumbs adhere.
  • Place the chops on the wire rack on the baking sheet.
  • Bake until the pork chops are cooked through and the coating is golden brown and crisp, about 20 minutes.
  • Using oven mitts or pot holders, remove the baking sheet from the oven and serve the chops immediately.
  • Place all the ingredients in a small mixing bowl and stir well to combine, using a wooden spoon. Then store in an airtight container for up to 3 months.

KA-BAM KABOBS MARINADE

This is my favorite steak marinade it's from Emeril Lagasse's recipe for Ka-Bam Kabobs. Is great just as a marinade for steaks on the grill or for kabobs too. It calls for Baby Bam Seasoning which I you can buy at the store or you can make it using Mermaidmagic's "Recipe #104844".
