- 1.Preheat your oven to 375 degrees F. Use a serrated knife to cut the baguette into about 30 slices. 2.Use a pastry brush to coat each side of the slices with olive oil. I actually sprayed mine because I have an olive oil mister. Sprinkle salt and pepper over one or both sides of the slices. 3.Spread the bread out onto a large baking sheet, not overlapping. Bake for 5 minutes. Remove from the oven and flip each toast. Bake for another 3-4 minutes. It's okay if they are not browned. Let the toasts cool for a few minutes. 4.Finely chop the raw bacon. Cook it in a heavy skillet until it is crispy, then remove to a paper towel-lined plate. 5.Add the ricotta to a medium bowl and stir until smooth. Add 1/2 teaspoon salt, if you want. (This is optional) 6.When the toasts are cool enough to handle, add a dollop of ricotta to the center of each toast. Top with a sprinkle of bacon. 7.Sprinkle with freshly ground pepper and more salt, if desired. Drizzle with a little bit of honey.
RICOTTA CROSTINI WITH BRUSSELS SPROUTS
I love this because you can do most of it ahead of time and just finish them at the last minute. They won't crowd your stove either. By Brussels sprout "leaves", I mean peeling off the layers of leaves from the Brussels sprouts and using them as garnish. You can braise the remaining "hearts" as a side dish as well.

- Preheat the oven to 350 degrees F.
- Toast the bread: In a large bowl, add the bread slices and toss with the olive oil, a sprinkle of salt and the oregano. Toss to blend and arrange them in a single layer on a baking sheet. Place the tray in the oven and bake until golden brown, 6 to 8 minutes. Set aside. In a large pot, heat the oil to 375 degrees F. Prepare a baking sheet fitted with a kitchen towel to drain the leaves as they come out of the oil. To test the temperature of the oil, put a few Brussels sprout leaves on a slotted spoon and submerge them in the oil. It should bubble slightly and the leaves should gradually rise to the top. Fry the rest of the leaves in small batches until they become light brown. Transfer them to the kitchen towel. Season with salt immediately.
- Assemble the crostini: Top each slice of bread with some of the ricotta. Season with salt and pepper. Top with some of the Brussels sprout leaves and the Parmesan. Sprinkle with vinegar. Serve immediately.

- Preheat the oven to 400°F. Brush the slices of bread with oil and season with salt and pepper. Place in a single layer on a baking sheet and toast in oven until crisp and lightly golden brown, about 8 minutes. Remove and let cool. (Can be made several hours in advance)
- Line a sheet pan with parchment paper. Place the bacon in a single layer on the parchment, not touching, and bake in the oven for 10 minutes, until just beginning to brown. Remove and brush the tops with the maple syrup and a sprinkling of black pepper, return to the oven and continue baking until crisp, about 10 minutes longer. Remove to a plate lined with paper towels and let drain and cool slightly. When cool enough to handle, but the bacon into medium-sized pieces.
- While the bacon is cooking, melt the butter in a large sauté pan over high heat. Add the shaved Brussels sprouts and cook, stirring occasionally, until wilted and lightly golden brown, stir in the thyme and season with salt and pepper.
- Put the ricotta into a bowl, season with salt and pepper and lemon zest and mix until combined. Mix together the Brussels sprouts and bacon in a bowl. Place a dollop of the ricotta on each slice of toast and top with the Brussels sprouts/bacon mixture. Serve warm or at room temperature.

- You can cook the bacon however you wish, but we like to bake ours. Line a large baking sheet with foil and add the bacon slices to a wire baking rack which keeps them out of the grease. Make sure slices are not stacked on one another. Bake for 15-25 minutes or until slices are crisp and retain their shape when held up. You do not want to overcook your bacon so be sure to check on it at the 15-minute mark. Check on it in one-minute increments.Once cooked, carefully remove the pan from the oven. After bacon has cooled, chop it up into smaller bite-sized pieces. Allow the grease on the foil to also cool fully before throwing the foil out. You can also save the bacon fat in a food-safe tin for future cooking.
- Cut off ends of onions and peel skin away. Slice onions into 1/4″ rings.Add butter, to skillet and heat. Place onion rings into the heated skillet. Sprinkle sugar, and balsamic vinegar, over the onions and cook over medium-low heat. Stir often to mix up onions and prevent any burning or sticking.Once onions begin to take on a golden color, sprinkle with salt, and stir. Cook for an additional 5 minutes. You do not need these to be too amber colored for this appetizer.
- Slice your ciabatta bread stick(s) into 1/4″ thick slices. Line slices on a parchment-lined baking sheet. Bake at 350 degrees F. for 6-8 minutes or until slightly golden brown. Once toasted, remove from oven and cool for 3-4 minutes.
- Add 1 tablespoon of ricotta cheese to each toast. Line with 4-5 slivered almonds each. Top with one hefty tablespoon of caramelized onions. Sprinkle each with 1/2 tablespoon of chopped bacon. Serve!
