This is an easy and tasty dish to take to a pot luck. I am always asked for the recipe. It is an adapted recipe from the Company's Coming cookbook series.

Baked Beans and Pineapple image

Steps:

  • Spray a medium sized pot with no stick spray.
  • Add oil enough to barely cover and add onions- sauté slowly until just soft Place in medium sized casserole.
  • Add remaining ingredients- stir to mix.
  • Bake uncovered in 350°F oven for 1 1/2 hours or until bubbly, stirring once or twice.

1 (8 ounce) can crushed pineapple

1 teaspoon mustard

1/4 teaspoon Worcestershire sauce

Steps:

  • In a 3- or 4-qt. slow cooker, combine all ingredients. Cook, covered, on low for 5-6 hours or until heated through.

Pineapple Baked Beans and Beef with Fried Pineapple Rings image

Steps:

  • In a large skillet, brown the beef. Drain excess fat and transfer to a 5-quart slow cooker. Add the remaining ingredients, mix well, cover, and cook on low for 4 to 8 hours until bubbly.
  • To make pineapple rings, beat egg well. Mix in the flour and make a thick paste. Dip pineapple slices in the batter and fry in medium hot oil.
  • To serve, place baked beans in bowl and top with pineapple rings.

1 (28-ounce) can baked beans
8 ounces pineapple bits
1 onion, chopped
1 green pepper, chopped
1/2 cup barbecue sauce

  • In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 2 tablespoons drippings. Saute onion in drippings until tender. Steps:

  • 1. Drain pineapple and reconstitute the onions in the pineapple juice.
  • 2. Mix together the beans (do not drain) and sauce with pineapple, bacon bits, brown sugar, Worcestershire sauce, and mustard. Drain the juice off the onions and add them to the beans, mix well.
  • 3. Bake in 325 oven for 90 minutes.

  • Heat oven to 350 degrees. Lightly coat an 11x17 inch baking dish with cooking spray. Set aside.
  • Drain pineapple chunks and reserve 2 tablespoons of juice. To a large bowl add the drained beans, pineapple chunks, and chopped onion.
  • In a small bowl, mix BBQ sauce, reserved pineapple juice, ketchup, brown sugar, honey, whole grain mustard, garlic powder, salt, and pepper. Pour mixture over beans.
  • Mix all ingredient together then pour into prepared dish. Add bacon pieces to the top of the mixture. Cover with foil and bake for 30 minutes. Uncover beans and continue to cook for 20 minutes. Remove from the oven, and let sit for 5 minutes. Serve hot.
