Ginger-Lime Pear Cobbler image

Steps:

  • In a large bowl, combine sugar and ground ginger. Stir in the pears, crystallized ginger and lime juice; set aside., Pour butter into an ungreased 11x7-in. baking dish. In a small bowl, combine the flour, sugar, baking powder, lime zest, salt and ginger. Stir in milk. Pour over butter (do not stir). Spoon pear mixture over the top. , Bake at 350° for 50-55 minutes or until bubbly and golden brown. Cool for 10 minutes before serving.

Steps:

  • Preheat oven to 350°. In a large saucepan, combine the first five ingredients; bring to a boil. Reduce heat; simmer, uncovered, 10 minutes or until pears are tender, stirring occasionally., In a small bowl, mix cornstarch and cold water until smooth; stir into pears. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in crystallized ginger. Transfer to a greased 8-in. square baking dish., In a large bowl, beat buttermilk, sugar, molasses, egg and oil until sugar is dissolved. In another bowl, whisk the remaining ingredients; gradually beat into buttermilk mixture. Pour over pear mixture., Bake 20-25 minutes or until filling is bubbly and a toothpick inserted in center comes out clean.

This fresh and easy dessert (or breakfast) dish cooks up quick and tastes decadent, although it is very light and made with very little fat and whole grains for good nutrition no one will ever guess is in there! I combined two recipes from my great aunt and made healthy substitutions to make it very low in fat, filled with whole grain goodness and guilt free without sacrificing any of the taste.

Baked Pear & Ginger Cobbler -Whole Grain Goodness image

Steps:

  • Preheat oven to 375.
  • Prepare the crumble topping by combining the first six ingredients and blending with a fork until moistened.
  • Prepare the pears by peeling and then slicing the pears (discard the core) and tossing with lemon, white flour and if desired, the 2 tbsp of sugar. (I have made it without this added sugar, because my pears were nice and sweet by themselves).
  • Spray a shallow dish with butter flavored cooking spray, then layer the pears evenly. Sprinkle the crumble topping over the pears.
  • Bake about 30-35 minutes on center oven rack until the crumble is a golden brown.
  • This is best served slightly warm or at room temperature. I finish with a dollop of freshly whipped cream, or vanilla ice cream and watch it dissappear!
  • Enjoy and be blessed.

Steps:

  • Preheat the oven to 375 degrees F.
  • For the topping: Combine the ingredients in a medium bowl and work together with a fork or with your fingertips until the ingredients are moistened.
  • For the filling: Combine the pears slices, lemon juice, and ginger in a large bowl. Add the sugar and flour and toss to blend.

  • In a large bowl, combine the first 5 ingredients; transfer to a greased 12-in. cast-iron skillet or 2-qt. baking dish. Heat butter in a small saucepan over medium heat for 7 minutes or until golden brown; pour over pear mixture. Baked Pears with Honey and Ginger image

Steps:

  • Preheat oven to 375°F. Spray 2 large ovenproof skillets with oil spray. Arrange half of pears cut side down in each skillet. Sprinkle 1/2 cup sugar and 1 1/2 teaspoons ginger over pears in each skillet. Mix honey, lemon juice and peel in small bowl. Drizzle over pears. Dot pears in each skillet with 3 tablespoons butter.
  • Place skillets with pears in oven. Bake until juices bubble thickly and pears are tender when pierced with small sharp knife, basting occasionally, about 15 minutes. Turn pears over. Bake 5 minutes longer. Remove pears from oven. (Can be made 1 day ahead. Cool. Transfer pears and cooking syrup to large glass baking dish; cover and chill. Rewarm uncovered in 375°F. oven 15 minutes before continuing.)
  • Arrange 2 pear halves on each of 8 plates. Transfer cooking syrup to 1 large skillet. Bring syrup to simmer, whisk in 4 tablespoons butter. Spoon over pears. Place 1 scoop yogurt alongside. Garnish with mint and lemon peel, if desired.

  • For ginger-buttermilk custard, bring cream and ginger to the simmer in a saucepan over medium heat, set aside off heat for 15 minutes to infuse, then bring back to the simmer.   • Combine baking powder in a bowl with remaining flour and a pinch of salt, stir in 100gm caster sugar, then mix in egg to form a smooth batter. Dollop batter over the pears and dot with remaining butter. Combine remaining sugar ground ginger, sprinkle over batter and bake pudding until golden brown and fruit is bubbling (40-45 minutes). Stand for 5 minutes, then serve warm with chilled ginger-buttermilk custard.
