Steps:
- Heat oven to 220C/200C fan/gas 7. Tip the flour into a mixer with a dough hook, or a bowl. Add the yeast, salt, oil and just under 100ml warm water then mix to a soft dough. Knead in the food mixer for about 5 mins, but if making this by hand, tip onto a work surface and knead for about 10 mins. The dough is sticky, but try not to add too much extra flour. Leave in the bowl and cover with a tea towel while you make the topping. There is no need to let the dough prove for a specific time - just let it sit while you get on with the next step.
- Tip the onions into a non-stick wok and add the oil, 4 tbsp water and balsamic vinegar. Cover with a saucepan lid that sits inside the pan to help the onions soften, then cook for 15 mins, stirring about 3 times and replacing the lid quickly so as not to lose too much moisture. After the time is up, the onions should be golden and all the liquid gone. Tip onto a plate. Add the spinach and garlic to the pan and stir-fry until the spinach has wilted.
- Take the dough from the bowl and cut in half with an oiled knife, then press each piece into a 25-15 cm oval on a large greased baking sheet with oiled hands. Don't knead the dough first otherwise it will be too elastic and it will keep shrinking back.
- Spread with the spinach followed by the onions, then dot with the cheese and scatter with the olives, thyme and sunflower seeds. Bake for 15 mins until golden and the base is cooked through.

BALSAMIC ONION, BACON, AND GOAT CHEESE PIZZA
My idea of the perfect pizza. The crust is crispy, the balsamic onions are sweet, the bacon is salty, and the goat cheese adds a little something creamy. I got this from mydailymorsel.com. The chef states: "I have spent a good deal of time trying to figure out how to get a crispy, golden crust on pizza when cooking it in your own oven. First of all, crank you oven up as high as it will go. The hotter your oven, the quicker the crust will crisp up. Second, a drizzle of olive oil under your crust before you bake it will ensure that it does not get soggy." Hope you enjoy!

PIZZA WITH CARAMELIZED ONIONS, FIGS, BACON AND BLUE CHEESE
Here is a recipe for pizza that calls to mind - at least this mind - the joys of car travel through southeastern France, where pizzas such as this are available at all the imaginary cafes in small towns near the Italian border. It certainly tastes as if it comes from that region and, if you close your eyes as you eat it, you can almost imagine yourself halfway through a drive from Aix to Turin. The time spent caramelizing the onions is more than worth it, so do it the day before you intend to make the pie. Which is when, as it happens, you should make the dough as well. And we have a recipe for that as well - a version adapted from the team behind the magical Roberta's Pizza in Brooklyn.

Steps:
- At least 45 minutes before cooking, preheat the oven and pizza stone to 550 degrees.
- Melt the butter in a large sauté pan over high heat. Add the onions, thyme and bay leaves. Cook for 5 minutes, stirring often, until the onions begin to wilt. Reduce the heat to medium-low and cook, stirring occasionally, until the onions have softened and turn a deep, golden brown, about 25 minutes. Season to taste with salt and pepper. Remove the bay leaves and transfer the onions to a small bowl.
- Place the bacon in the pan and set over high heat. Cook, stirring occasionally, until brown and crispy. Using a slotted spoon, transfer the bacon to a small bowl.
- Place the pizza dough on a heavily floured surface and stretch and pull, using your hands or a rolling pin, into about a 14-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Cover with the toppings, careful not to press on the dough and weigh it down: the caramelized onions first, then the figs and bacon, and finally the Gorgonzola, leaving roughly a 1/2 inch border. Shake the pizza peel slightly to make sure the dough is not sticking. Carefully slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes. Drizzle with a little olive oil and some cracked black pepper. Serve hot. Makes 1 pizza.

Mix in 1.5 cups of flour, salt, and olive oil slowly and combine with a spoon until sticky. - While dough is rising, melt butter in a skillet. Add in mushrooms and onions and mix occasionally until mushrooms are translucent and caramelized, about 10 minutes. Remove from heat and add in sausage. Cook and crumble until browned all the way through. Remove with a slotted spoon and let rest on a paper towel on a plate.
- Line a baking sheet with parchment paper. Stretch out dough and use rolling pin to evenly spread out. Use remaining olive oil, salt, and pepper to cover the dough. Layer onion and mushroom mixture, sausage, mozzarella, and goat cheese. Cook for 20 minutes or until cheese is golden brown.

- Preheat oven to 400 degrees F (204 C) and position a rack in the middle of the oven. If using a pizza stone, place the stone in the oven as it preheats.
- Sauté onion in butter or olive oil over medium heat until soft, stirring frequently. Season with salt and pepper. Cover to keep in the moisture if they begin to look dry – add a splash or two of water if they’re getting too brown. Set aside once cooked.
- Once oven is preheated, brush flatbread with olive oil and place on the pizza stone or a baking sheet and “pre-bake” to crisp for about 5 minutes.
- In the meantime, spoon goat cheese into a bowl and add a splash of milk or water to thin so it’s spreadable. Whisk until smooth.
