BANANA LOAF CAKE I
This recipe is a family favorite. It is great for using overripe bananas. I usually double the recipe and make two loaves. You can also add walnuts if you wish. Note: When your bananas are overripe, you can put them in the freezer until you are ready to use them.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 5x9-inch loaf pan.
- Mash bananas and add flour, sugar, butter, vanilla, baking powder, baking soda and egg. Mix well. Pour into loaf pan.
- Bake in preheated oven until toothpick inserted into center of cake comes out clean, 50 to 60 minutes.

Steps:
- 1. Slice bananas into coin sized pieces. Layer evenly on bottom of 9 X 13 inch baking dish.
- 2. Sprinkle white chocolate chips over bananas. Pour evaporated milk over white. chocolate chips Sprinkle banana bread quick bread mix over everything.
- 3. Drizzle with melted butter. Add nuts and coconut.
- 4. Bake at 350 degrees for 40 to 50 minutes or until brown.

Steps:
- Heat oven to 350°F. Generously spray 2 (8x4-inch) loaf pans with cooking spray; lightly flour pans.
- Select your favorite banana bread recipe variation from those below.
- In large bowl, beat all ingredients above plus ingredients from selected variation below until well mixed. Divide batter evenly between pans.
- Bake 45 to 55 minutes or until toothpick inserted in center of loaves comes out clean and inside of cracks do not look wet. Cool 15 minutes in pans on cooling racks. Remove loaves from pans to cooling racks. Cool completely, about 2 hours, to prevent crumbling when slicing. For easier slicing, store loaves tightly covered 24 hours. Cut with serrated knife, using a light sawing motion.

- 1. Preheat oven to 350 degrees.
- 2. Grease a 9 X 13 pan.
- 3. Mix together oleo, sugar, eggs, bananas, sour cream, flour, baking soda, baking powder, and 1 tsp of vanilla until smooth and pour into 9 x 13 pan.
- 4. Bake at 350 degrees for 40 minutes.
- 5. While cake is baking, beat together the other tsp on vanilla, cream cheese, and confectioners' suger until smooth.
- 6. Allow cake to cool before frosting.
- 7. Enjoy banana, nut free bliss!
