BANANA SORBET (RAW FOOD)

This very simple recipe was found on the internet with the stipulation "...super easy to make -- as long as you have a juicer." Well, all you really need is a good, ol' fashioned potato masher & you're on! This will melt quickly, so make just enough to eat right away, or you'll need to stash some away in the freezer! Obviously, if you use very ripe bananas you'll have a stronger banana flavor!

  • In a bowl, mash (or in a juicer 'puree') the bananas.
  • Spoon into a serving bowl, top with fresh fruit, a proper raw food granola, or nothing at all, & enjoy!

Steps:

  • Peel the banana and cut into chunks about 1-inch long. Put the banana, lime juice and honey in a food processor and process by pulsing until it is pureed but still a little chunky. Spoon into a serving dish and serve.

Acai-Banana Sorbet image

Steps:

  • Cut each banana into 6 chunks, and freeze until rock solid, preferably overnight.
  • With the acai inside the packet, crush the puree into smaller pieces. Process the pieces in a food processor to a fine slush. Add the frozen banana chunks, coconut oil and maple syrup, and begin to process (the food processor may jolt in the very beginning). As the bananas break down and combine with the acai, the mixture will look crumbly, then gooey and eventually smooth and slightly slushy, like a sorbet. Stop the food processor frequently to scrape down the side of the bowl and break up any clumps. Serve right away, or scrape into a container and freeze until ready to serve.

2 ripe medium bananas, peeled

1 tablespoon virgin or extra-virgin coconut oil
1 tablespoon pure maple syrup

Steps:

  • In a small saucepan, stir together sugar and water. Bring to a boil, then remove from heat and allow to cool.
  • When the sugar syrup is cool, stir in bananas. Pour into a freezer - safe baking dish. Freeze for 3 to 4 hours, until set at the edges.
