Steps:

  • Preheat the oven to 325 degrees F. Line a baking sheet with foil. Whisk the egg white in a medium bowl until foamy. Stir in the spice rub and maple syrup. Add the almonds and cashews and toss to coat.
  • Spread the nut mixture on the prepared baking sheet and sprinkle with a little sugar. Roast until golden brown, stirring halfway through, 30 to 35 minutes. Let cool 15 to 30 minutes. Store in an airtight container for up to a week.

1 large egg white
2 to 3 tablespoons Eddie's BBQ Rub (recipe follows)
2 to 3 tablespoons pure maple syrup
1 cup roasted unsalted almonds
1 cup roasted unsalted cashews
Sugar, for sprinkling
1/4 cup packed light brown sugar
1/4 cup smoked paprika
3 tablespoons kosher salt
2 tablespoons white pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon celery seeds
1 teaspoon mustard powder
1/2 teaspoon ground cinnamon

BBQ SPICE RUB

This rub is so simple! It's made with the everyday spices you have in your cupboard. I rub it on everything from chicken to pork to burgers to steak. I keep it in a Ziploc® bag in the freezer. It's always ready to go! Double or triple your ingredients so you always have it on hand.

SWEET, SALTY, SPICY PARTY NUTS

I find this technique much easier than the stovetop pan method. You'll get beautiful, perfectly frosted nuts that are roasted evenly, with no bitter burned spots.
