BARB'S FRIED APPLES -DIABETIC-LOW FAT
These are very tasty fried apples, low in sugar and fat. Great as a dessert served with sugar-free ice cream. Also good served as a side with pork. Use any apple, I like to use fuji or golden delicious.

Steps:
- Melt butter in skillet, add the sliced apples; I add a little water, cover and cook for about 10 minutes.
- Add brown sugar splenda, cinnamon, nutmeg if using, stir & cover, cook about 5 minutes.

Steps:
- In a large iron skillet, melt the bacon drippings.
- Careful don't let it get too hot.
- Place the apples evenly over the bottom and sprinkle them with the lemon juice, followed by the brown sugar, then salt.
- Cover and cook over a low heat for 15 min.
- until the apples are tender, yet juicy.
- You don't want them dry.
- Sprinkle the apple with cinnamon and nutmeg before serving.

This is a copycat recipe that tastes just like Arby's Jamocha Shake. I changed the recipe to make it lower in fat. Using Dreyers Fat Free Ice Cream, you cannot tell the difference. There is less than 1 G fat per serving.

- Combine coffee, milk, and sugar in a blender and mix on medium speed for 15 seconds until sugar is dissolved.
- Add ice cream, and chocolate syrup, then blend on high speed until smooth and creamy.
- Makes 2 shakes.
- Note: You can make this recipe, and freeze half for later if you wish.

- Beat egg yolks with dry mustard in the top of a double boiler until blended.
- Add vinegar gradually, beating after each addition.
- Cook over simmering water, stirring constantly until thick and smooth.
- Add milk gradually, beating in with a fork or wire whip.
- Cook 5 more minutes over simmering water.
- Remove from heat.
- Let cool 10 minutes.
- Add remaining ingredients, blend well.
