BASIC CHICKEN SOUP

Classic chicken soup with a punch of lemon and garlic. Cooked egg noodles, rice, or pasta make a nice addition to this soup.

Basic Chicken Soup image

Steps:

  • Mix 1 cup water and cornstarch in a bowl until cornstarch dissolves.
  • Heat olive oil and garlic in a large pot over medium heat for 1 minute. Add carrots, celery, and salt; cook until tender, 5 to 10 minutes. Add chicken thighs; cook until no longer pink in the center and the juices run clear, about 7 minutes. Add remaining 7 cups water and chicken soup base.
  • Bring to a boil, coaxing anything stuck to the bottom of the pot off with a spatula. Boil for 20 minutes. Add cornstarch mixture, sage, and pepper; mix well and continue to boil for 5 minutes. Remove from heat and add lemon juice.

Chicken Tomato Basil Soup image

Steps:

  • Combine meat, mushrooms, onion, garlic, oil, salt, pepper and wine in a pan and sautee until meat is just about done and veggies are soft.
  • While the meat+ are cooking add the remainder of the ingredients to a crock pot or regular pot.
  • When meat is done, add it to the pot.
  • Cook on low on the stove for 2 hours or high in the crock pot for 4 hours.
  • An hour before the soup is done, cook pasta.
  • When ready to eat, add pasta to soup and garnish with shredded mozz. cheese.
  • ENJOY!

2 lbs ground chicken (or what ever ground meat you prefer)
14 ounces mushrooms
1 large red onion, chopped
3 garlic cloves, chopped
1 teaspoon olive oil
salt, to taste
pepper, to taste
1/2 cup marsala wine
3 (14 1/2 ounce) cans diced tomatoes, with juice
4 cups chicken broth
7 large basil leaves, chopped (~ 1 cup)
3 green onions, chopped
1 tablespoon olive oil
2 tablespoons Worcestershire sauce
2 tablespoons hot sauce (or less if you don't want a "bite")
1 tablespoon oregano
1/2 cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
1 cup cooked penne (or your choice of pasta)

Steps:

  • Heat oil in a 6-quart dutch oven until hot. Add onion and chile, and cook 10 minutes or until lightly browned and tender, stirring occasionally.
  • Add ginger, garlic, red pepper flakes, and 1 tablespoons fish sauce. Cook one minute.
  • Add broth, water, and half the basil; heat to boiling on high.
  • Reduce heat to low, cover and simmer for 20 minutes.
  • Uncover, increase heat to medium-high. Stir in chicken and uncooked noodles and heat to boiling. Boil 1 minute.
  • Remove dutch oven from heat. Skim off fat.
  • To serve, stir in lime juice, remaining fish sauce, and basil. Garnish with sprigs.

Steps:

  • In a 2 to 3 quart pan, combine butter, onion, and garlic.
  • Stir occasionally over medium heat until onion is limp and slightly tinged with brown, about 10 minutes.
  • Stir in flour to coat onion.

Steps:

  • In a saucepan, simmer broth and basil, uncovered, for 15 minutes. In another saucepan, melt butter. Stir in flour and pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; gradually stir in broth and sour cream (do not boil).

  • Heat up you chopped vegetables and garlic in the microwave for 5 minutes.
  • Add to a preheated 4 quart slow cooker.
  • Add hot chicken both, Vegeta, salt and pepper.
