- Preheat oven to 350°. In a large bowl, combine the first 8 ingredients. In a small bowl, combine honey, butter and vanilla; pour over oat mixture and mix well. (Mixture will be sticky.), Press into a 13x9-in. baking pan coated with cooking spray. Bake 14-18 minutes or until set and edges are lightly browned. Cool on a wire rack. Cut into bars.

BAYOU CHEWY HONEY BARS

Steps:
- Line the base of a 9-by-13-inch pan with parchment paper and spray generously with cooking spray.
- In a large bowl combine the oats, crispy rice, peanuts and raisins; stir to combine. Set aside.
- In a large, 2-quart saucepan combine the brown sugar, honey, butter, peanut butter, vanilla and salt. Bring to a boil and cook, stirring with a wooden spoon, over medium-high heat, until the mixture reaches 220 degrees on a candy thermometer. Immediately pour the hot liquid over the oat mixture, stirring until all of the dry ingredients are coated.
- Transfer the bar mixture to the prepared pan and press into place using your hands. Chill in the refrigerator for about an hour.
- To serve, cut into half lengthwise; then horizontally into twelve 2-inch bars.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.
- In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
- Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.
