HONEY BARBECUE CHICKEN WINGS
This is my own recipe. I love the way they get so gooey and sticky...goes really well with some homemade mac and cheese, some bbq baked beans, and a biscuit.....mmmmm....yum!

Steps:
- Wash, dry, and season the wings with the salt, garlic, pepper, cayenne, sugar, and paprika. Preheat the oven to 375.
- Spray a cookie sheet with a generous spray of cooking spray.
- Place the wings in a single layer on the cookie sheet, and place in the oven.
- Cook for 35-40 minutes, depending on the size of the wings, turning once.
- While they are baking, make the sauce by slowly simmering the sauce ingredients over the lowest heat.
- When the wings are done baking, carefully dip them in the sauce, and place them back in the oven for another 5 minutes, or until the sauce is bubbling.
- ENJOY!And remember to save some for everyone else!

- Cut wings into 3 sections; discard wing tip sections. In a small saucepan, combine the soy sauce, barbecue sauce and honey. Bring to a boil; cook until liquid is reduced to about 1 cup., Meanwhile, in a large bowl, combine the flour, salt, paprika and pepper. Add wings, a few at a time, and toss to coat., In an electric skillet or deep fryer, heat oil to 375°. Fry wings, a few at a time, until no longer pink, 3-4 minutes on each side. Drain on paper towels. Transfer wings to a large bowl; add sauce and toss to coat. Serve immediately.

- Preheat oven to 425°F (220°C).
- In a bowl, combine flour, chili powder, salt, pepper, paprika, and garlic powder. Coat the wings in the flour evenly, shaking off any excess.
- Place the floured wings on a parchment paper-lined baking sheet and spread them out in a single layer.
- Bake for 45 minutes, flipping halfway through, until skin is crispy and golden brown.
- Preheat oven to 500°F (250°C).
- In a separate bowl, combine the BBQ sauce and the honey. Stir the cooked wings in the sauce and coat them evenly.
- Place the coated wings back onto the baking sheet and spread them in a single layer.
- Bake for 8 to 10 minutes, until sauce is bubbly and caramelized. Cool, then serve.

- Prepare the Sauce: Melt butter in a medium saucepan over medium. Add chili powder, onion powder, and garlic powder; cook, stirring constantly, until spices are fragrant and toasted, about 30 seconds. Stir in cider, honey, ketchup, Worcestershire, mustard, and salt. Bring sauce to a boil over medium-high; reduce heat to medium-low, and simmer until thickened, stirring occasionally, 10 to 12 minutes. Remove from heat, and stir in vinegar. Set aside.

- Place a wire rack on top of a parchment lined baking sheet. The rack and sheet should be close to the same size. Set aside.
- Wash the chicken wings with equal parts of cold water and vinegar. Cut lemon in half and squeeze one half of the juice into the water/vinegar. Allow wings to soak for about 20-30 minutes, then drain the water (Note 1).
