Steps:

  • Cook up your chicken breasts; then chop into small pieces. Preheat your oven to 375° F Combine the chicken, barbecue sauce, and ranch dressing in a medium sized bowl Spray your muffin tins with non-stick spray. Place a wonton wrap in each section and gently press it down to the bottom Place a small spoonful of barbecue-ranch chicken mixture on top of each wrap. Then sprinkle mozzarella cheese on top Then re-layer again: wonton, chicken mixture, cheese. (Each cup will have two layers of all ingredients.) Cook at 375°F for 18-20 minutes. Garnish with cilantro.

2 chicken breasts, chopped
1 cup barbecue sauce
1/4 cup ranch dressing
Round wonton wraps (The round wraps are newer, so if you can't find them just grab a package of the square ones. Square wraps will work just fine.)
Shredded mozzarella cheese
Fresh cilantro (optional garnish)

My family loves jalapeno poppers and jalapeno popper dip; but I made it rarely because of the high fat and calorie content. My wonton poppers allows us to enjoy one of our favorite appetizers without the guilt These little "poppers" are a great way to enjoy the taste of jalapeno poppers without all the fat and calories. -I used light mayonnaise and cream cheese to reduce fat. -Chicken for protein. & Wonton wrappers sprayed with a non stick cooking spray instead of deep frying.

Steps:

  • Press wonton wrappers into miniature muffin cups coated with cooking spray. Spritz wrappers with cooking spray. Bake at 350° for 5-6 minutes or until edges begin to brown., Meanwhile, in a small bowl, combine the chicken, cream cheese, Parmesan cheese, mayonnaise, chilies and jalapeno. Spoon chicken mixture into cups. Bake 8-10 minutes longer or until filling is heated through. Serve warm. Refrigerate leftovers.

  • Place the uncooked chicken strips into a Ziploc bag and sprinkle with the ranch seasoning. Seal the bag and shake/massage until the chicken is coated with the seasoning.
  • Bring the canola oil over medium heat in a medium sized skillet. When the oil is hot, add the chicken pieces and stir them around to coat with oil. Arrange them into a single layer and cook for 5-7 minutes, flipping occasionally, until the chicken strips are cooked through. Remove the chicken to a cutting board and chop into small pieces.
