Beef and Cauliflower Rice Soup image

Steps:

  • 1. Place the oil in a Dutch oven. Brown the meat with the green onions. Add the spices, marinara, and tomato paste.
  • 2. Pour in the beef broth. Bring to a boil and add the cauliflower rice. Reduce to a simmer and cook 15 minutes. Add the red wine vinegar and spinach and cook 5 minutes.

1 Tbsp olive oil
1 lb ground beef
1 bunch scallions chopped
2 tsp each garlic powder, dried basil, and paprika
1/2 tsp black pepper
1 tsp each thyme, oregano, and salt
1 c marinara sauce
1/4 c tomato paste
4 c beef broth
2 c cauliflower rice
1 Tbsp red wine vinegar
1 c fresh spinach leaves

Cat's Cajun Dirty Cauliflower

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
  • Cook and stir seasoning blend in a large skillet over medium heat until heated through, 2 to 3 minutes. Add cauliflower and garlic; cook and stir until slightly softened, 2 to 3 minutes.
  • Stir cooked ground beef, beef broth, Worcestershire sauce, parsley, Creole seasoning, pepper, garlic powder, onion salt, and bay leaf into the cauliflower mixture. Cook, stirring occasionally, until almost all of the beef broth has been absorbed, 8 to 10 minutes. Stir in green onions and hot sauce. Discard bay leaf before serving.

Steps:

  • In a skillet, heat oil over medium-high. Brown meat on all sides. Add broth; cover and simmer until beef is tender, about 1 hour. Add cauliflower, green pepper, soy sauce, garlic, and ginger root if desired. Cover and simmer until the vegetables are tender, about 5-7 minutes. Combine cornstarch, sugar and water. Stir into meat mixture. Bring to a boil, stirring constantly; cook 2 minutes or until thickened. Stir in green onions. Serve on rice.

  • In a frypan, let the oil get hot; cook meat (in batches if necessry) until browned on all sides; drain off fat.
  • Add to a 4-6 quart slow-cooker: squash, carrots, onions, garlic, thyme, and basil.
  • Place meat on top of vegetables.
  • Pour in broth and wine Cover and cook on LOW for 7-10 hours.
  • Add in spinach and rice; cover and cook 5-10 minutes or until rice is tender.
