BARBECUE BEEF CUPS
This is a quick and easy recipe given to me by a friend. My family loves it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
- In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
- Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
- Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

- In a large skillet, cook beef over medium heat until no longer pink, breaking into crumbles; drain. Stir in the spaghetti sauce; cook over medium heat for 5-10 minutes or until heated through. , Press biscuits onto the bottom and up the sides of greased muffin cups. Spoon 2 tablespoons beef mixture into the center of each cup. , Bake at 375° for 15-17 minutes or until golden brown. Sprinkle with cheese; bake 3 minutes longer or until cheese is melted.

BEEF BISCUIT CUPS
These have reached comfort food status in my house. Very easy to make, spices can be added to personal taste, same with types of cheese, sauce, etc. This can easily be adjusted to a lower fat version by adjusting the ground beef fat content, biscuits and cheese. I am sure there are lots of these recipes or similar variations floating around the Zaar.

Steps:
- Preheat oven to 375 degrees.
- Brown ground beef, drain, add spaghetti sauce and seasoning.
- Cook over medium heat about 5-10 minutes or until heated through.
- Press biscuits into the bottom and up the sides of greased muffin cups.
- Spoon 2 tablespoons (+) meat mixture into the center of each cup.
- Bake for 15 to 17 minutes or until golden brown.
- Sprinkle with cheese, bake 3 minutes longer or until cheese melts.
BISCUIT AND BEEF CUPS

Steps:
- Preheat oven to 400°F. Brown ground beef, bell pepper and onion in a medium skillet; drain, Stir in barbecue sauce and brown sugar; mix until thoroughly combined. Remove from heat.
- Place one biscuit in each of 8 greased muffin cups, pressing the dough up the sides to the edge of the cup.
- Spoon beef mixture into cups and sprinkle with cheese. Bake for 12 minutes, or until biscuits are golden and cheese is melted.

Stir in barbecue sauce; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally., Separate dough into 10 biscuits; flatten to 5-in. circles. Press onto bottoms and up sides of greased muffin cups. Fill with beef mixture., Bake until biscuits are golden brown, 9-11 minutes. Sprinkle with cheese; bake until cheese is melted, 1-2 minutes longer.

- Heat oven to 375°F. In 10-inch skillet, cook beef, onion, garlic and bell pepper over medium-high heat until beef is thoroughly cooked; drain. Stir in ketchup, Worcestershire sauce, pepper and brown sugar.
- Separate dough into 8 biscuits; place each biscuit in ungreased regular-size muffin cups (2 3/4x1 1/4 inches). Firmly press dough in bottom and up side of each cup, forming 1/4-inch rim. If desired, brush tops and sides of biscuits with an egg wash before baking. To make the egg wash, beat 1 egg yolk and 1/4 teaspoon water until well blended.
- Spoon about 1/3 cup beef mixture into dough-lined cups. Sprinkle each biscuit with 1 tablespoon shredded cheese.
