BEEFY FRENCH ONION POT PIE
This easy dish was in a back issue of Taste of Home. If you like onions--and who doesn't, right?--you will love this extra-oniony casserole. So quick and easy to prepare in under 30 minutes.

Steps:
- 1. In a large skillet over medium heat cook ground beef and onion until beef is no longer pink; drain.
- 2. Stir in the French onion soup; bring to a boil. Transfer to an ungreased 9-inch deep dish pie plate. Sprinkle with the mozzarella cheese.
- 3. Bake in a preheated 350-degree oven for 3 minutes, or until the cheese is melted. Top with the biscuits and bake 15-20 minutes longer or until biscuits are golden brown.

- Place potatoes in a microwave-safe dish; cover with water. Cover and microwave on high for 7-8 minutes or until tender; drain and set aside., In a large skillet, saute beef in 1 tablespoon oil in batches until no longer pink. Remove and set aside., In the same pan, saute onion and mushrooms in remaining oil until tender; add the carrots, peas, ketchup and pepper. Combine the cornstarch, sour cream and gravy until blended; stir into pan and heat through. Stir in potatoes and beef. Divide mixture among four greased 16-oz. ramekins., Remove crescent roll dough from tube, but do not unroll; cut dough into 16 slices. Cut each slice in half. Arrange seven pieces, curved sides out, around the edge of each ramekin. Press dough slightly to secure in place. Place remaining pieces on the center of each. Place ramekins on a baking sheet., Bake at 375° for 17-20 minutes or until filling is bubbly and crusts are golden brown.

Got this one from a Betty Crocker cookbook. Changed it up just slightly for my family's taste. Very hearty and good when it is bitter cold outside.

Steps:
- Add onions and butter to a 5 to 6 quart crock-pot; toss to coat.
- Top with bay leaves and beef.
- Cover and cook on LOW for 9-10 hours or until the onions are deep brown in color.
- Mix together the beef consomme, sherry, apple juice, and thyme in a bowl.
- Pour into crock-pot; increase setting to HIGH.
- Cover and cook 10 minutes or until hot.
- Take out bay leaves.
- Spoon soup into oven-proof soup bowls.
- Top each with a slice of toast and 1/4 cup shredded cheese.
- If you want, broil 6 inches from heat source for 3-5 minutes or until cheese is bubbly and begins to brown.
