There are so many names for this one, but if you like toast and fried eggs you probably have a version of it. It makes a quick and easy breakfast that satisfies as the yolk soaks into crusty bread. Steps:

  • 1. Take bread slices and cut out hole in the center with a biscuit cutter.
  • 2. Mix the sugar and cinnamon together. Spread half of the butter on the bread and then sprinkle the cinnamon mixture on top. Broil in oven until lightly browned.
  • 3. Place remainder of butter in a hot non-stick skillet and place toast slices (browned side up)in immediately. Crack an egg into each of the center holes. Season with salt and pepper.
  • 4. Cover the skillet so the yolk will cook without having to turn the bread over. Cook on medium high until the egg is over easy or over medium.
  • 5. Place the toast on a plate and drizzle with pure maple syrup or honey.

2 slice favorite bread for toast
2 Tbsp unsalted butter, softened
1 Tbsp sugar
1/2 tsp ground cinnamon
2 eggs
1 pinch kosher salt
1 pinch fresh ground pepper

We made only 6 nest with this recipe so we could overlap the top and give an "edge" for our bird to sit on. You could serve these right away or wrap them in a pretty cellophane bag and give them as a gift.

Steps:

  • Use a 6 or 12 cup muffin tin depending on desired size of nests. We made only 6 nest with this recipe so we could overlap the top and give an "edge" for our bird to sit on.
  • Heat butter and marshmallows over medium heat.
  • Stir till melted.
  • Add noodles and stir till completely coated.
  • Spray muffin tin then hands with cooking spray.
  • Place mixture into muffin cups and shape with hands to form "nests".
  • Refrigerate.
  • Approximately 30 minutes later, gently remove nests from muffin tin and perch a Peep on the side. (It helps if the nest is still a bit sticky, this will "glue" the peep on.).
  • Place nests on a tray and put back in the fridge till completely set.
  • Fill with candy eggs.

BIRD'S NEST BREAKFAST CUPS

I got the basics of this recipe from a friend of mine and thought it was a great idea since these little nests can be made ahead, which I love. They are delicious, easy to make, and can be customized to your own tastes. I not only use the recipe as a delicious grab-and-go breakfast, but serve it to guests nestled into some lovely cheese grits, alongside fresh fruits and French toast made on a panini press. Oh, and don't forget the mimosas!

Bird's Nest Breakfast Cups image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease 24 muffin cups.
  • Mix hash brown potatoes, salt, black pepper, olive oil, and 2/3 cup shredded Cheddar cheese in a bowl. Divide mixture between prepared muffin cups and use your fingers to shape potato mixture into nests with hollows in the middle.
  • Bake in the preheated oven until hash browns are browned on the edges and cheese has melted, 15 to 18 minutes. Remove hash brown nests.
  • Reduce oven temperature to 350 degrees F (175 degrees C).
  • Whisk eggs and water in a bowl until thoroughly combined; season with salt and black pepper. Pour equal amount of egg mixture into each nest; sprinkle with bacon crumbles and 1 teaspoon Cheddar cheese.
  • Bake in the oven until eggs are set, 13 to 16 minutes. Let cool in pans and remove by sliding a knife between potato crust and muffin cup.

  • In a large saucepan over medium heat, melt butter and marshmallows until smooth, stirring occasionally. Add the peanut butter and chocolate chips; heat and stir for 2 minutes or until smooth. Remove from the heat; stir in chow mein noodles until well coated. , Divide into 12 mounds on a waxed paper-lined baking sheet. Using fingers, shape each into a nest; press an indentation in the center of nest. Fill each nest with three or four jelly beans or candy eggs. Cool.

Steps:

  • Separate the eggs. Chop the nuts fine.
  • Cream together 1 cup softened butter and sugar. Add the yolks, and beat well. Add the flour, and mix well.
  • Make small balls out of dough. Roll balls in egg white, and then in the nuts. Place balls on greased cookie sheets, and press center of cookie with thumb. Bake at 350 degrees F (175 degrees C) for 8 minutes. Press center of cookie again, bake until lightly browned 4 to 6 minutes. Cool cookies on racks.
  • To make frosting, begin by blending the water, shortening, vanilla, and 1/4 cup softened butter or margarine together thoroughly. Slowly add confectioners' sugar, and mix until smooth and creamy. More water may be needed to make desired consistency.

  • Julienne both the carrots and zucchini in a large bowl with a hand spiralizer. Then thinly slice the onion and baby spinach and toss into the same bowl, along with the eggs, Parmesan cheese, flour, panko bread crumbs, salt, and pepper.
  • Toss all the ingredients together using 2 large forks (or use your hands) until well combined. Using 2 forks, scoop a small amount, and transfer onto the baking sheet. Try to swirl and shape the vegetables into a small bird's nest. Try to give each one some depth, adding more on top to avoid them looking flat, like pancakes. Each fork-full leads to about a 3-inch diameter in size.
  • Bake for 15 to 17 minutes, or until golden brown on the bottom and crispy around the edges. Keep in mind, if you undercook them, the nests will fall apart. Remove from the oven and use a spatula to transfer to a serving plate. Serve them warm with dipping sauce nearby.

  • I cook bacon in the oven, so I always start with that step first. If you prefer to cook your bacon in a skillet, that's fine too, just improvise accordingly. Line a rimmed cookie sheet with foil and place bacon onto sheet placing it into a cold oven. Turn oven to 400 degrees. I usually cook the bacon for about 14 minutes because I like it crispy. If you don't like it as done, shorten the cooking time.
  • While bacon is in the oven, take a cookie cutter (or use an empty can or small mug) to cut a circle or square from the center of the bread (personally, I like cutting a square). I save the cut out bread in a baggie for either homemade bread crumbs, or a small mid day snack smeared with some peanut butter.
  • Melt the butter in a large nonstick frying pan over medium heat. While the butter is melting, crack the eggs into a small cup and break the yolk (you don't have to break the yolk, I just prefer it that way). Add the slices of bread to the frying pan and pour eggs into the hole (nest); season with salt and pepper. Cook for about 3 minutes or until the bottom is a nice golden brown. Gently flip using a flat spatula and continue to cook for an additional 3 minutes.
  • Meanwhile, the bacon should be done (or close to it). Once the bacon is done, remove it from the oven and place on a paper towel lined plate; carefully throw away foil being careful not to burn yourself on the bacon fat. Chop bacon with a knife or crumble with your fingers.
