BIRD'S-NEST PUDDING PIE
We like to think of this dessert as the turducken of pies -- spiced, cranberry-stuffed apples are baked in a pie shell, surrounded by cake batter. It's inspired by the bird's-nest pudding in Laura Ingalls Wilder's classic "Farmer Boy."

- Preheat oven to 375 degrees. On a lightly floured work surface, roll out dough 1/8 inch thick. Cut out a 13-inch round. Fit into bottom and up sides of a 9-inch springform pan. Freeze 15 minutes.
- Blind-bake crust: Line chilled crust with parchment and then foil, pressing into corners to hold up sides. Fill with baking beans or rice. Bake until sides are set and beginning to turn golden, 45 minutes to 1 hour. Remove paper and beans from crust and continue baking until bottom crust is golden brown and dry, about 10 minutes more.
- Meanwhile, stir together 1/2 cup sugar, 1/2 cup cranberries, cinnamon, nutmeg, and 1/4 teaspoon salt. Peel apples; scoop out cores from stem ends with a melon baller or a sharp-tipped spoon, leaving bottom ends intact. Fill hollows with 1 heaping tablespoon cranberry mixture, pressing down to fit as much in as possible and mounding slightly over tops. Transfer to an 8-by-8-inch baking dish. Dot with room-temperature butter. Thirty-five minutes before crust is done, place in oven and bake 25 minutes, turning apples halfway through so sides facing edge of dish face in. Cover with foil and bake until apples are just barely tender when pierced with the tip of a knife, 5 to 10 minutes more. Toss remaining 1/4 cup cranberries with juices in bottom of dish.
- Meanwhile, whisk together flour, baking powder, and remaining 1/4 teaspoon salt. In a separate bowl, whisk egg yolk with remaining 1/2 cup sugar until combined. Whisk in flour mixture, then melted butter and milk. Beat egg whites until stiff peaks form, then gently fold into batter.
- Pour batter into warm crust. Nestle apples into batter, spooning cranberries and 2 tablespoons of juices from dish over top. Return to oven; bake until pie is puffed and beginning to turn golden on edges, and springs back when pressed in center, 30 to 40 minutes. Let cool at least 45 minutes. Serve warm, with ice cream.

- In a large saucepan over medium heat, melt butter and marshmallows until smooth, stirring occasionally. Add the peanut butter and chocolate chips; heat and stir for 2 minutes or until smooth. Remove from the heat; stir in chow mein noodles until well coated. , Divide into 12 mounds on a waxed paper-lined baking sheet. Using fingers, shape each into a nest; press an indentation in the center of nest. Fill each nest with three or four jelly beans or candy eggs. Cool.

BIRDS NEST PIE
Here's an easy one for ya. Plain and simple. I usually thinly slice the apples with the slicing disc on my food processor and away they go. Enjoy with a dip of your favorite ice cream.

Steps:
- Divide apples evenly between two greased 9-inch pie plates; set aside.
- In a mixing bowl, combine flour, sugar, baking soda, cream of tartar, sour milk and egg; mix well.
- Divide batter and pour over apples.
- Bake at 350° for 25-30 minutes or until pies are lightly browned and test done.
- Immediately invert onto serving plates (so apples are on the top).
- Combine all topping ingredients; sprinkle over apples.
- Serve warm.

Modification of Bird's Nest Pie found in Once-a-Month Cooking, removing the egg. Works very well and was a family pleaser.

Steps:
- Break spaghetti in half, and cook as directed on package until al dente; drain.
- While spaghetti is warm, combine with flax seed, 6 tablespoons water, and Parmesan chees.
- Use a spoon to press spaghetti into bottom and up sides of a well-greased, 10-inch pie plate.
- Saute onion in margarine, mix with sour cream, and spread over crust.
- At same time, brown sausage in a large skillet; drain fat.
- Stir in tomato paste and water. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes, stirring occasionally.
- Spoon over sour cream mixture.
- Cover dish with foil and freeze. Put cheese slices in a 1-quart bag; attach to side of dish.
- To prepare for serving, thaw pie and cheese, preheat over to 350 degrees. Bake pie, uncovered for 25 miutes. Arrange mozzarella slices on top; return pie to oven until cheese melts.
SHEPHERD'S PIE OAMC
I just made my first batch of this and it smells great. I made homemade gravy and plan on freezing from-scratch mashed potatoes separately. I also think that this would be great to have on hand for when you do have leftover mashed potatoes.

Steps:
- In a dutch oven or stockpot, cook the beef over medium heat.
- About halfway through add the onion.
- Cook until the beef is no longer pink, drain off the grease.
- Microwave the carrots for 2 minutes.
- Add the gravy and veggies.
- Cool and put into 2 freezer containers. I put them in freezer bags.
- To prepare: Thaw frozen beef mixture in the refrigerator.
- Put into a greased 2 quart baking dish.
- Top with mashed potatoes, melted butter and sprinkle with paprika.
- Bake uncovered at 350F for 30-35 minutes or until heated through.

- melt butter in a saucepan and fry the onion and carrots until golden brown.
- Stir in the flour and cook one minute.
- Gradually stir in beef broth and bring to a boil, stirring constantly.
- Add the Worchestershire sauce, oregano, seasonings and corn.

BIRD'S NEST BREAKFAST CUPS
I got the basics of this recipe from a friend of mine and thought it was a great idea since these little nests can be made ahead, which I love. They are delicious, easy to make, and can be customized to your own tastes. I not only use the recipe as a delicious grab-and-go breakfast, but serve it to guests nestled into some lovely cheese grits, alongside fresh fruits and French toast made on a panini press. Oh, and don't forget the mimosas!

- Preheat oven to 425 degrees F (220 degrees C). Grease 24 muffin cups.
- Mix hash brown potatoes, salt, black pepper, olive oil, and 2/3 cup shredded Cheddar cheese in a bowl. Divide mixture between prepared muffin cups and use your fingers to shape potato mixture into nests with hollows in the middle.
- Bake in the preheated oven until hash browns are browned on the edges and cheese has melted, 15 to 18 minutes. Remove hash brown nests.
- Reduce oven temperature to 350 degrees F (175 degrees C).
- Whisk eggs and water in a bowl until thoroughly combined; season with salt and black pepper. Pour equal amount of egg mixture into each nest; sprinkle with bacon crumbles and 1 teaspoon Cheddar cheese.

BREAKFAST BIRD'S NEST
My grandmother and mom both made these for me when I was very little and now I make them for my little ones. They love their eggs made this way. Some people call them "egg in a window", but my mom always called them "bird's nests". Kids love them, but I still make them for myself :) There's just something yummier about the "dipping" toast being fried in butter instead of just popped in the toaster, and after dipping, the egg white tastes great with the fried bread from the "nest".

Steps:
- Lay bread on the counter or a plate.
- Using a wide topped glass, cut a circle out of the center of the bread.
- Over medium heat, melt 1 tsp butter in a non-stick skillet.
- When heated, lay both pieces of bread (the circle and the piece with the hole) in pan and reduce heat to low-medium.
- When bread is very lightly browned on the bottom, drop 1 tsp butter into the hole.
- When melted, crack the egg over the hole and allow egg to drop into and fill the hole.
- Cook for 1- 2 minutes and then flip the bread with the egg and the bread circle over.
- Cook for about 2- 3 minutes, until bread is lightly browned and egg is set.
- Serve egg with the toasted bread circle for dipping.

Each fork-full leads to about a 3-inch diameter in size.
- Bake for 15 to 17 minutes, or until golden brown on the bottom and crispy around the edges. Keep in mind, if you undercook them, the nests will fall apart. Remove from the oven and use a spatula to transfer to a serving plate. Serve them warm with dipping sauce nearby.
