DAD'S HAMBURGER GRAVY
This is one of my favorite 'cheap meal' recipes that I learned from my Southern cookin' Dad. Creamy hamburger gravy with just the right blend of spices is perfect served over homemade biscuits, mashed potatoes, rice, fried potatoes.. just about anything!

Steps:
- Crumble the ground beef into a large deep skillet over medium-high heat. Cook and stir until evenly browned. Drain most of the grease, leaving just enough to coat the pan. Add the onions, and cook for a few more minutes.
- Pour 4 cups of the milk into the pan, and stir to scrape up any bits of food that could burn on the bottom of the pan. Mix in the bouillon, butter, sage, salt and pepper. Bring to a boil, and cook for 5 minutes, stirring frequently.
- Mix the flour into the last cup of milk until smooth. Slowly pour into the skillet, stirring constantly. Simmer for a few minutes to thicken. If the gravy is too thick, thin with a little bit of milk. If it is too thin, simmer longer, or add more flour. Taste and adjust seasonings before serving.

WHITE TRASH HAMBURGER GRAVY AND BREAKFAST BISCUITS
This was my sister's favorite thing to eat when she was growing up. She wouldn't let anyone but me make it for her.

Steps:
- Cook and drain beef. (I rinse the beef under hot water to remove all of the grease -- it is rich enough!).
- Melt butter in a pan and when melted and lightly sizzling add the flour.
- Whisk until combined and gently simmer the butter/flour mixture for about two minutes to remove the flour/starch taste but don't let it brown any.
- Add the 1.5 cups of milk and quickly whisk until smooth. SImmer until thick over medium heat stirring constantly. It will be quite thick.
- Add the half and half cream and quickly whisk until smooth.
- Cook over low heat until thickened.
- Add the beef and adjust the seasonings.
- Serve over good biscuits well buttered.
- This is a very creamy and rich gravy. You may use 2 cups whole milk if you need to omit the cream.
- If it is too thick for your taste -- then dilute with more milk -- but it usually is perfect the way it is written.
- Leftovers are excellent.

EASY HAMBURGER BISCUITS WITH MUSHROOM GRAVY
This is a replica of a main dish often served in our high school cafeteria (Go Spartans!). Easy, tasteful and filling, these are one of my hubby's most requested meals. I use the cheesy garlic biscuit mix by Bisquick. Sometimes I use a can of tomato soup rather than mushroom just for a change. I like to serve these with mashed or fried potatoes and green beans.

- Follow directions on biscuit mix package to make dough. Brown hamburger with onions and salt and pepper to taste preference. Mix 1/2 or a little more of meat into dough. Kneed to mix well. Bake as directed on biscuit mix package.
- Meanwhile mix soup and 3/4 can milk and remaining cooked hamburger and cook till throughly warm. This sauce can be thinned to your preference by adding more milk. For a more meaty flavor, add a little beef bouillon but be careful as it will become more salty.
- Serve hot biscuits smothered with sauce and sprinkled lightly with chili powder.
BISCUITS AND GRAVY BURGER
What a scrumtastic burger! Talk about a conversation starter... Can you imagine serving these to your guests for breakfast? Love it.

- 1. In a medium bowl, combine ground beef, Italian sausage, chopped onion, salt and pepper. Using your hands, mix together and form into patties.
- 2. Cook patties on medium high heat on a grill or on a grill pan. Cook for about 16 minutes, flipping half way through cook time. Two minutes before they are done, add pepperjack cheese to patties to melt.
- 3. While burgers are cooking, prepare the gravy. Saute 1/2 pound ground sausage in a skillet. Once cooked remove from skillet and drain. Set aside
- 4. Add butter, onions, tomatillos, and jalepenos to the skillet. Cook for 6 minutes, until reduced in size. Add back the Italian sausage. Sprinkle with flour and whisk in milk, salt, pepper, cayenne, and garlic powder. Bring to a boil, then remove from heat.
- 5. To plate, slice biscuit in half. Add patty, top with gravy and other half of biscuit. Garnish with cilantro, jalepeno, and lime juice.

- In 8-inch skillet, crumble and cook pork sausage over medium heat, stirring occasionally, until no longer pink. Drain, reserving drippings.
- Heat oven to 375°F. Lightly grease or spray 13x9-inch pan.
- In large bowl, stir Bisquick mix, milk and sugar until dough forms. Place dough on surface lightly sprinkled with Bisquick mix; knead until smooth, about 10 turns. - Transfer rolls to serving plates. Spoon gravy over tops; sprinkle with salt and pepper to taste.

- Brown really well and do not drain meat unless you are using hamburger and the amount of fat is quite a bit.
- Sprinkle flour over meat and stir well.
- Once the flour is mixed in well and browned really well, slowly add milk stirring constantly until nice and thick.
