NEW YEARS BLACK-EYED PEA AND CABBAGE SOUP

This is a quick, easy and tasty soup to enjoy on New Year's Day. We really liked the addition of Rotel and used the original version. You do taste some heat, but not too much. If you like things spicy, feel free to use the hot version. We were a bit concerned that there was no liquid added to the recipe. But as the soup simmered...

New Years Black-Eyed Pea and Cabbage Soup image

Steps:

  • 1. Open cans of black-eyed peas, put into 3 quart cooking pot.
  • 2. Open can of Rotel, add to pot. Remove cabbage core and chop up into bite size pieces. Put this into pot. Add salt & pepper to taste.
  • 3. Cook on medium heat until cabbage is soft.
  • 4. Serve in bowls with cornbread or french bread on the side.

2 can(s) black-eyed peas
1 can(s) rotel (any degree of spice) i like hot.
1 medium cabbage head-red or green
1 tsp salt (or to taste)
1 tsp black pepper (or to taste)

BLACK-EYED PEAS AND LITTLE SMOKIES WITH CABBAGE

What a great way to ring in the New Year with a super easy crock pot meal! This obviously has your traditional black-eyed peas and cabbage, but it also was a really good flavor. The lil' smokies add slight smokiness. Served with cornbread as Robin suggests, this is quite the New Year's Day meal.

Black-Eyed Peas and Little Smokies With Cabbage image

Steps:

  • 1. Do not drain black-eyed peas.
  • 2. Place all ingredients in a crock pot and cook on high for 3-4 hours until cabbage is cooked through.
  • 3. Serve with cornbread.

1 lb little smokies, cut each one in half
4 can(s) black-eyed peas, with jalapenos if you like a kick
1/2 medium onion, chopped
3 clove garlic, minced
1/2 medium cabbage head, sliced thin
3 c chicken broth

Black-Eyed Pea and Cabbage Slaw image

Steps:

  • Soak peas in enough water to cover by 2 inches overnight. Drain peas and rinse. In a large saucepan simmer peas, bay leaf, and parsley sprigs in enough water to cover by 2 inches until tender, about 25 minutes. Peas may be cooked 2 days in advance and kept covered and chilled.
  • Drain peas and discard bay leaf and parsley sprigs. In a large bowl whisk together vinegar, mustard, horseradish, and salt and pepper to taste and add oil in a stream, whisking until dressing is emulsified. Add peas, cabbage, carrots, scallion, garlic, minced parsley, and salt and pepper to taste and toss well. Slaw may be made 1 day in advance and kept covered and chilled.

1 1/2 cups dried black-eyed peas, picked over
1 bay leaf
2 parsley sprigs plus 1 cup minced parsley leaves
1/4 cup white-wine vinegar
3 tablespoons Dijon mustard
1/3 cup drained bottled horseradish
3/4 cup vegetable oil
a 2 1/2- to 3-pound cabbage, grated coarse in a food processor (about 10 cups)
6 carrots, grated coarse in a food processor (about 4 cups)
1/2 cup minced scallion
2 large garlic cloves, minced

BLACK-EYED PEA AND CABBAGE SOUP WITH HAM image

Steps:

  • Put ham hock, water and herbs into slow cooker and cook on low for a few hours until water has turned into flavored broth. Remove hock, strip meat from bone, chop and set aside for later. Add vegetables and cook until they are nearly done. Add hydrated beans and chopped meat, cook for another hour or so; serve. Add lemon juice at table.

6 c water
1 t dried sage
1 t dried thyme
1 t dried oregano
1/2 t crushed red pepper flakes
1 small onion, diced
3 garlic cloves, pressed
3 medium carrots, cut into thin coins
2 ribs celery, shaved of strings and thinly sliced
1/2 head small green cabbage, cored and thinly sliced
1.5 c dried black-eyed peas, hydrated
Fresh lemon juice

  • Black eyed Peas:.
  • Saute onion with ham or salt pork until onions are soft. Add both cans of black eyed peas with juices. Bring to boil. Reduce heat and simmer for 30 - 45 minutes.
  • Cabbage Dish:.
  • Brown ground beef. Mix in worcestershire sauce, garlic powder, salt and pepper. Add one onion, bell pepper, and celery to beef just before browned and saute for about five minutes. Slice head of cabbage into quarters and separate leaves. Mix cabbage leaves in with beef and vegetables and cook on low heat until leaves are soft but still some what crisp.

Lucky New Year's Black-Eyed Pea Stew image

Steps:

  • Heat the oil in a deep pan or stockpot set over medium-high heat. Stir in the onions and garlic, and cook until transparent, about 5 minutes. Mix in the Napa cabbage; toss and cook until wilted, about 2 minutes. Add the ham hocks, cayenne pepper, bay leaf, Cajun seasoning, and salt, stirring for 2 minutes more. Pour in the chicken stock and black-eyed peas. Bring the mixture to a boil, then reduce heat to low and cook uncovered for 2 hours.
  • Meanwhile, place the rice and water into a saucepan. Bring to a boil, reduce heat to low, cover, and simmer until all liquid is absorbed and rice is light and fluffy, about 20 minutes.
  • Before serving, remove the ham hocks from the pot. Coarsely chop the meat, and return to the black-eyed pea mixture. Serve hot over Basmati rice.
