JERK TURKEY SLOW COOKER SOUP FROM WEIGHT WATCHERS

This is a great soup recipe I found on WeightWatchers.com. It's very simple to make and has only 3 POINTS per serving!

Jerk Turkey Slow Cooker Soup from Weight Watchers image

Steps:

  • Combine allspice, cayenne, ginger, garlic salt and 1/4 teaspoon of black pepper in a medium bowl.
  • Add turkey and toss to coat; set aside for 15 minutes.
  • Place turkey in a 5-quart slow cooker; add any spices remaining in bowl. Add garlic, onion, tomatoes, beans, broth, salt and remaining 1/4 teaspoon of pepper; stir.
  • Cover and cook on LOW setting for 6 to 7 hours.
  • Stir in lime juice and cilantro; let sit for 5 minutes for flavors to blend.
  • Yields about 1 1/2 cups per serving.

1 medium garlic clove, minced
1 medium onion, chopped
14 1/2 ounces fire-roasted diced tomatoes with green chilies, undrained
15 ounces canned black beans, drained and rinsed
2 cups canned chicken broth
1/2 teaspoon table salt
1 tablespoon fresh lime juice
2 tablespoons fresh cilantro, minced

This turkey salad is my original creation. I got a craving the day after Thanksgiving last year and spent the afternoon creating this delicious turkey salad.

Steps:

  • Stir together mayonnaise, mustard, bacon, Cheddar cheese, relish, pepperoncini, red pepper, and salt in a large bowl; add the turkey and stir to coat.

  • In a small bowl combine all of the seasoning ingredients for the chicken and mix to combine. Rub seasoning onto both sides of chicken breasts (if you have extra seasoning, reserve and add to soup broth.
  • Preheat a nonstick pan or skillet to medium heat, spray with cooking spray, and cook chicken breasts 4-5 minutes each side or until cooked through. Cut chicken into 1 inch pieces and set aside.
  • Add water and chicken bouillon to a medium-large pot and bring to a boil over medium high heat. Reduce to simmer. Add tomatoes, red peppers, green chiles, jalapeños, onion, sweet potato, beans, and rice and chicken. Cook 5 minutes. Add paprika, salt, and chili powder. Cook 10 minutes longer.
  • 5 minutes before serving, whisk corn starch and 2 tablespoons cold water together in a small bowl until corn starch is dissolved. Add mixture to soup and stir to combine. Allow to thicken 5 minutes. Enjoy!
