Blackberry Quench image

Steps:

  • Put boiling water over blackberries.
  • Add salt, grated rind, orange and lemon juices.
  • Let simmer slowly for 5 minutes.
  • Press through sieve, then add cold water and sugar.
  • Place in fridge until cold, several hours.

1 pinch salt
1 grated lemon, rind of
1 lemon, juice of
1 orange, juice of
1/3 cup sugar
3 cups cold water

MOMMA'S TWO-EGG TREASURE CAKE

Momma made great big smiles with this wonderfully moist and delicious cake! I believe it's originally a newspaper clipping, but she's used it for the past 45 years at least. Filled with your favorite fruits and icing, this cake lends itself to any special occassion. I hope you like it as much as I do! Enjoy!!

Momma's Two-Egg Treasure Cake image

Steps:

  • In a large bowl, sift together flour, sugar, salt& baking powder.
  • Set aside.
  • Drop in shortening, add 2/3 of milk, vanilla and mix for 2 minutes on low speed of electric mixer.
  • Add one egg at a time, beating continually, add the rest of milk and mix for 2 additional minutes.
  • Grease and flour two 8" round cake pans, and divide the batter evenly between the two pans.
  • Preheat oven to 375 and bake for 25 minutes or until golden brown in color.
  • Test the center of the cake with a toothpick; if it comes out clean the cake is done!
  • Allow cakes to cool before removing them from the pans.
  • Thoroughly cool before decorating.
  • Note: If you only have all-purpose flour on hand, reduce amount of flour by 2 tbsp.
  • and increase baking powder by 1 tsp.

  • You may use this recipe for cupcakes by reducing the milk to 3/4 cup.
  • Fill with your favorite jam or fruit and cover with your favorite icing.

  • Preheat oven to 350F. Line a 7 x 11-inch baking pan with parchment paper and set aside. (Alternately, you can use a 9x9-inch baking pan).
  • Add the flour, sugar and salt to a food processor. Pulse a few times to combine. With the processor running, add the butter cubes and then switch to pulse and pulse until the mixture is crumb-y, with just small pieces of butter visible. Remove 3/4 cup of the mixture and set aside. Pour the remaining mixture into your prepared pan and press down lightly and evenly.
  • Bake in preheated oven for 12-15 minutes, or until set. Remove from oven, leaving oven on. Allow to cool 10 minutes.
  • Meanwhile, prepare the filling by whisking together the eggs, sugar, sour cream, flour, salt and vanilla in a medium bowl. Once crust has cooled 10 minutes, pour filling overtop of the crust. Scatter the blackberries evenly overtop. Top with the reserved crumb mixture, scattering it here and there, but allowing some of the blackberries to peek out.
