DRAGON'S BLOOD PUNCH (NON-ALCOHOLIC)

- Combine all ingredients in a large punch bowl or pot. Add ice and stir.
- For grown up version, add 4 cups berry vodka and 1/2 cup orange liqueur.
- Ladle into serving glasses.
BLOOD ORANGE VAMPIRE PUNCH

- Make the simple syrup: Combine the sugar and 1 cup water in a small saucepan. Cook over medium heat, stirring, until the sugar dissolves, about 2 minutes. Transfer to a medium bowl and refrigerate until chilled, about 1 hour.
- Combine the blood orange juice, cherry juice, lemon juice, chilled simple syrup and 2 cups cold water in a pitcher. Refrigerate until chilled, at least 30 minutes.
- Just before serving, stir the tequila into the punch, if using. Decorate the rim of the pitcher with red gel icing, allowing some to drip down the side. Serve over ice.
BLOOD-RED SANGRIA COCKTAIL
This citrusy martini gets its striking layered appearance from drops of sangria-inspired simple syrup made from red wine and dark sweet cherries (after all, "sangria" means "bleeding" in Spanish!). An "impaled" cherry adds the finishing touch.

- To make simple syrup, in 1 1/2-quart saucepan, mix sangria simple syrup ingredients. Heat to boiling over medium heat. Simmer 3 minutes, stirring occasionally. Remove from heat; let cool 30 minutes. Strain mixture through fine mesh strainer; discard solids. Cover and chill sangria syrup until ready to use. Makes about 1 1/2 cups.
- To make cocktail, fill cocktail shaker with ice. Add vodka and orange liqueur to cocktail shaker; cover and shake. Strain into martini glass. Drizzle sangria syrup into cocktail in glass. Garnish with cherry.

- Fill ice cube trays with 1 1/2 cups orange juice, and freeze. To make punch, stir remaining orange juice, soda, lime juice, rum, and bitters into a 16-cup punch bowl. Before serving, add frozen orange slices. Add ice cubes as needed to keep chilled.

- Tip the cherry juice, orange peel, chilli, cinnamon sticks, cloves and ginger into a large saucepan. Simmer for 5 mins, then turn off the heat. Leave to cool, then chill for at least 4 hrs, or up to 2 days - the longer you leave it the more intense the flavours. If serving to young children, take the chilli out after a few hours.
- When you're ready to serve, pour the juice into a jug. Serve in glass bottles or glasses and pop a straw in each. If you're adding vodka, do so at this stage. Dangle a fangs sweet from each glass.
