BLUE CHEESE AND BACON STUFFED MUSHROOMS

Blue Cheese and Bacon Stuffed Mushrooms image

Steps:

  • Remove stems from mushrooms and set caps aside; discard stems or save for another use. In a small bowl, combine the cream cheese, blue cheese, onions, garlic and 1/4 cup bacon bits. Stuff into mushroom caps, a scant tablespoonful in each., Place in a greased 15x10x1-in. baking pan. Sprinkle with remaining bacon bits. Bake, uncovered, at 375° for 18-22 minutes or until mushrooms are tender.

Blue Cheese & Bacon Stuffed Peppers image

Steps:

  • Cut peppers into quarters. Remove and discard stems and seeds. In a small bowl, mix cream cheese, blue cheese, bacon and green onion until blended., Grill peppers, covered, over medium-high heat or broil 4 in. from heat until slightly charred, 2-3 minutes on each side., Remove peppers from grill; fill each with about 1 tablespoon cheese mixture. Grill until cheese is melted, 2-3 minutes longer.

Bacon & Blue Cheese Burger Stuffed Peppers image

Steps:

  • Slice tops off peppers, set aside. Remove seeds from peppers & set aside.
  • Combine all other ingredients in a large bowl. Get in there with your hands and mix till evenly distributed.
  • Fill peppers to top with the meat mixture. Place tops of peppers back on. Wrap each pepper with aluminum foil.
  • To cook peppers you can either place the wrapped peppers on a hot grill for approximately 30 minutes, turning every few minutes or so till done; OR, and this is my preferred way, you can place the wrapped peppers directly on the coals in the grill or the campfire for about 15-20 minutes, turning (carefully) every couple minutes. Take a thermometer to the middle of the meat to ensure a temperature of at least 160 degrees F.
  • Remove peppers from grill/coals. Let sit wrapped for about 10 minutes, then unwrap & enjoy! Serve with some more steak sauce & pickle spears.

  • Cut and discard tops from peppers; remove seeds. Pour sauce into bottom of a 4- or 5-qt. slow cooker, reserving 3/4 cup. In small bowl, combine remaining ingredients; add reserved sauce. Spoon mixture into peppers; place in slow cooker. Cook, covered, on low until peppers are tender, 3-1/2-4-1/2 hours. , Spoon cooking juices over peppers. If desired, top with additional blue cheese.
