FRESH CORN CAKES
Corn's always been the basis of my favorite recipes-in fact, these corn cakes were one of the first things I made for my husband. For dinner, they're nice with fresh fruit salad and ham. They're also great with breakfast sausage and orange juice. Tom works for the highway department on Mount Hood, and we live at its base. Our children are 19, 16 and 13.

BLUE CORN CRAB CAKES WITH BLACK OLIVE-RED PEPPER RELISH AND BASIL VINAIGRETTE
Steps:
- Heat 2 tablespoons oil in a medium saute pan over high heat. Add the onion, garlic and jalapenos and cook until soft. Remove from the heat and set aside to cool slightly.
- In a mixing bowl, whisk together the horseradish, mustard, creme fraiche until combined. Stir in the onion mixture. Add the crabmeat and 2 tablespoons of the flour and gently fold to combine; season with salt and pepper. If the mixture appears too loose, add more flour, tablespoons at a time. Refrigerate, covered for at least 1 hour or up to 1 day.
- Divide the chilled crab mixture into 8 patties about 1/2-inch thick. Dredge each cake in the corn chips or cornmeal and tap off excess.
- Heat the remaining 4 tablespoons olive oil in a large nonstick saute pan over high heat and fry the cakes for about 3 minutes on each side, or until crusty and lightly browned. Place 2 crab cakes on a dinner plate and top each cake with a tablespoon of the relish and drizzle with the vinaigrette.
- Combine all ingredients in a small bowl and season with salt and pepper. Let sit at room temperature for at least 30 minutes before serving.
- Combine the basil, mayonnaise, vinegar and a little water in a blender and blend until smooth. Add the honey, olive oil and salt, to taste, and blend a few more seconds.
BLUE MESA GRILL SWEET CORN CAKE
This is a recipe I submitted in response to a request. I have not tried it. "This dish is really more like a pudding than a cake. Serve a scoop of it freshly steamed as it loses its light, fluffy consistency when reheated in the oven. The secret to making great corn cake is in the steaming. You can try and bake the cake in a pan in the oven (inserted in a pan of water to create steam), or you can steam them on the stove in a steamer basket." I found this recipe through Recipe Goldmine. It comes from The Blue Mesa Grill in Dallas, TX.

- To steam the corn cake, line the steamer basket with the softened corn husks.
- Fill with corn cake batter.
- Cover with more corn husks and a tea towel to absorb moisture.
- Steam on the stove for about 2 1/2 hours.
- Batter should not stick to husks when corn cake is done.
- If it does, it needs to steam longer.
- **Noteon steamers: You can also improvise a steamer by placing a rack on cans in a large stockpot or Dutch oven with a tight-fitting lid.

- Prepare the blue corn masa in a mixing bowl. Start adding the lukewarm water slowly and integrate the flour with the water using your hands.
- Add as much water as necessary. We ended up using two cups of water. Just be careful in not adding too much water as the consistency of the masa has to be like playdough.
- Have a small bowl with water to damp your fingers, this will allow to keep the moisture and have a workable masa. Form eight balls of masa and set aside.
- Take a ball of masa and press with your hands forming a small tortilla. Stuff it with refried beans and close forming the tlacoyo. It to look like a diamond shape. Keep moistening your fingers with the water to achieve the correct tlacoyo form.
