GINGER BLUEBERRY JAM

- In a Dutch oven, mash the blueberries. Stir in sugar, pomegranate juice and lemon juice. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Return to a full rolling boil. Boil and stir for 1 full minute. , Remove from the heat; skim off foam. Stir in crystallized and ground ginger. Ladle hot mixture into 4 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims. Center lids on jars; screw on bands until fingertip tight. Process for 10 minutes in a boiling-water canner.

- Rinse four clean 1-cup plastic containers with lids with boiling water. Dry thoroughly., Preheat oven to 250°. Place sugar in a shallow baking dish; bake 15 minutes. Meanwhile, finely grate 1 tablespoon peel from orange. Peel and chop orange., In a large bowl, combine blueberries, warm sugar, grated peel and chopped orange; let stand 10 minutes, stirring occasionally. Add pectin; stir constantly for 3 minutes to evenly distribute pectin. , Immediately fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours., Jam is now ready to use. Refrigerate up to 3 weeks or freeze up to 12 months. Thaw frozen jam in refrigerator before serving.

ORANGE-BLUEBERRY MARMALADE
Steps:
- Using a vegetable peeler, remove the zest of the oranges and lemons. Cut the zest pieces into thin slices, then finely chop or grind and set aside. Peel the remaining white part of the peel from the fruit and discard. Chop the fruit pulp, reserving any juice and set aside. Place the zest and 1 1/2 cups water in a medium saucepan over high heat and bring to a boil. Reduce the heat, cover and simmer for 20 minutes, stirring occasionally. Add the reserved fruit pulp and juice, cover and simmer on low heat for an additional 7 minutes. Add the blueberries and simmer for 3 more minutes. Stir the sugar into the fruit in the saucepan. Bring the mixture to a full rolling boil and cook exactly 1 minute, stirring constantly. Stir in the pectin. Remove from the heat and skim off any foam with metal spoon. Serve at room temperature.

- Preheat oven to 400°F. Stir together flour, baking powder, salt, and 1/3 cup of the granulated sugar in a large bowl. Cut butter into flour mixture with a pastry blender until crumbly and mixture resembles small peas. Freeze 5 minutes. Add 1 cup of the cream, stirring just until dry ingredients are moistened.
- Turn dough out onto parchment paper; gently press or pat dough into a 3/4-inch-thick, 9- x 6-inch rectangle. (Mixture will be a little crumbly.) Cut into 6 (3- x 2-inch) rectangles. Place biscuits in a single layer on a baking sheet. Brush tops with remaining 1 tablespoon cream, and sprinkle with remaining 1 tablespoon granulated sugar. Refrigerate until ready to use.
- Stir together blueberries, brown sugar, cornstarch, orange zest, and grated ginger in a large bowl until well blended. Spoon berry mixture evenly into 6 (7- to 8-ounce) ramekins, about 1 cup in each. Place on an aluminum foil-lined rimmed baking sheet.
- Bake in preheated oven 20 minutes. Remove from oven, and place 1 biscuit on each ramekin. Return to oven, and bake at 400°F until biscuits are golden brown and done, about 18 more minutes. Cool on baking sheet on a wire rack at least 30 minutes. Serve with ice cream.
