BLUEBERRY WALNUT SALAD

I love Blueberries and i love salad, together they make a great healthy salad and this is perfect on those hot summer days.

Blueberry Walnut Salad image

Steps:

  • 1. In a large bowl, toss the salad greens with the blueberries, walnuts, and raspberry vinaigrette. Top with feta cheese to serve.
  • 2. *** You can chopped up red onions, use spinach leaves with other greens too. For a great meal, add grilled chicken.

1 (10 ounce) package mixed salad greens
1 pint fresh blueberries
1/4 cup walnuts
1/2 cup raspberry vinaigrette salad dressing
1/4 cup crumbled feta cheese

Steps:

  • Place everything in a blender and blend until smooth. Place in a sealable container and use right away or refrigerate for no more than 2 days.

2 tablespoons white miso
2 tablespoons Champagne wine vinegar
1/4 cup fresh orange juice
1 teaspoon chopped fresh thyme leaves
4 cloves garlic, minced
2 cups blueberries, washed
1/4 cup walnuts, halved and toasted
1/4 teaspoon fresh ground black pepper

Blueberry Walnut Wild Rice Salad image

Steps:

  • Preheat oven to 350°F.
  • Place walnuts on a baking sheet and bake 5-7 minutes, until lightly toasted. Set aside to cool.
  • Wash and drain blueberries, remove stems and place in a large bowl.
  • Add sugar, salt, pepper and tarragon. Toss to coat. Let stand about 15 minutes.
  • Add rice, chicken and walnuts.
  • In a small bowl combine dressing ingredients.
  • Pour over blueberry mixture and mix well. Place lettuce and orange segments on four plates. Top each with salad mixture. Serve at room temperature.

  • Preheat the oven to 300 degrees F and move your oven rack to the lower part of the oven. Line a baking sheet with parchment paper. Combine all of the glazed walnut ingredients in a medium bowl. Spread out evenly on the prepared baking sheet. Bake for 15 minutes. Remove from the oven, stir the walnuts, then bake for an additional 15 minutes. Keep an eye on them- you don't want them to burn in your oven. Remove from the pan and transfer to a cutting board to cool- making sure you break apart any clumps of almonds.
  • Place all of the dressing ingredients in a blender or small food processor and pulse until smooth.
  • In a large salad bowl, combine the greens, blueberries, pear and walnuts. Toss with 1/3 cup of the dressing. Add the blue cheese and toss again. Add additional dressing, as desired.
