BOB'S BBQ SAUCE

This is a great basic BBQ sauce our family got from a fireman friend. It has a nice zing from some horseradish. We've used it on everything from chicken to meatloaf! This is also great to increase the servings, bottle it up and refrigerate for multiple uses.

Steps:

  • In a bowl, mix the brown sugar, cider vinegar, ketchup, dry mustard, Worcestershire sauce, and horseradish sauce. Refrigerate until ready to use.

Steps:

  • Mix the first six ingredients, and any or all of the rest that intrigue you, with one exception:
  • Just before using, add the aromatics (ginger, herbs, etc). Don't overmarinate. Brush lightly on meat, fish, or portabello mushrooms.
  • The marinade will keep for years (sez Bob) as long as it isn't contaminated by raw meat or fish.
  • Finally, this marinade acts as a preservative if you're taking fish or meat to a potluck barbque.

1 cup soy sauce
1/4 cup hoisin sauce
1/2 cup red wine
1/4 cup sugar
1 teaspoon honey
1 teaspoon ground black pepper
2 fresh garlic cloves (minced)
2 teaspoons ginger (freshly grated) (optional)
1 teaspoon chili (optional)
1/3 cup green onion, finely sliced (optional)
1 bunch cilantro, finely chopped (optional)
1 teaspoon sesame oil (optional)
1 teaspoon five-spice powder (optional)
1 teaspoon star anise, crushed (optional)
1 ounce Scotch whisky (optional)

This started as some tilapia baked with diced tomatoes. Then I added a few items I thought would add to it. It did! And Here It IS !

Steps:

  • In large skillet over medium heat, heat olive oil and sautee garlic, bell pepper and onion a few minutes until soft and fragrant.
  • Add white wine, cilantro, clams with juices, diced tomatoes with juice, and red clam sauce.
  • Simmer uncovered to reduce until slightly thickened
  • Sprinkle the tilapia and shrimp with Bay Seasoning and add to sauce.
  • Cook only until seafood is flaky and white throughout.
  • DO NOT OVER COOK SEAFOOD.
  • Serve over wheat linguini or long grain rice.
  • Sprinkle with Romano.
  • Enjoy!
