Boiled Potatoes with Butter image

Steps:

  • Put the potatoes, garlic, bay leaf, and peppercorns in a large saucepan, add cold water to cover by about an inch and season generously with salt,. Bring to a boil, lower the heat, and simmer until potatoes are fork tender, about 5 to 8 minutes depending on their size.
  • Drain and discard the garlic, bay leaves, and peppercorns. Halve the potatoes, if large, toss with the butter and season with salt, and pepper, to taste. Keep warm.

Steps:

  • Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.

4 tablespoons (1/2 stick) unsalted butter
2 1/2 pounds small white or Yukon gold potatoes, scrubbed but not peeled
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped mixed fresh green herbs, such as parsley, chives, and dill

NEW POTATOES WITH HERBES DE PROVENCE, LEMON AND COARSE SALT

Herbs de Provence is a specific combination generally consisting of rosemary, thyme, basil, savory, chervil, mint, marjoram, oregano, and sometimes lavender. If you do not have some on hand, simply use dried rosemary; it's a safe bet. Try to buy new potatoes that are 1 1/2" in diameter for this dish. If they are much bigger, cut in half before boiling. New Potatoes With Herbes De Provence, Lemon and Coarse Salt image

Steps:

  • Place the potatoes in a large sauce pan or medium stockpot with salted water to cover; bring to a boil over high heat.
  • Reduce the heat to a gentle boil and cook until potatoes are just tender, about 10 minutes, depending on size.
  • Drain and set aside to cool slightly.
  • In a large nonstick skillet, heat oil over medium-high heat.
  • Add the herbs de Provence, and cook, stirring constantly, for about 10 seconds.
  • Add drained potatoes, coarse salt, and lemon juice; stir well to coat.
  • Cook tossing and stirring constantly, until the potatoes are heated through, 1- 2 minutes.
  • Season with pepper to taste.
  • Serve immediately.
  • For advance Preparation: You can boil the potatoes and let them stand for up to one hour at room temperature before completing the recipe.
  • Or, you can refrigerate the boiled potatoes overnight.
  • Bring them to room temperature and finish the recipe.

New Potatoes With Garlic and Herbs image

Steps:

  • Put the potatoes in a saucepan, cover with water and boil until tender, 10 to 15 minutes. Drain.
  • Heat the olive oil in a heavy nonstick skillet. Add the potatoes. Cook for a few minutes over medium-high heat, until the cut sides of the potatoes just begin to turn golden. Add the garlic and scallions. Cook a minute or so longer, until the garlic softens, then add the chervil and parsley.
  • Season to taste with salt and pepper and serve.

  • If using large potatoes, cut them into two inch cubes. If using mini potatoes, keep whole. Do not peel either variety.
  • In a heavy bottomed pan or pot (we used a 5 quart dutch oven with a tight fitting lid), place potatoes, butter, garlic, wine, vegetable stock, water, pepper flakes, salt and pepper. Cover and bring to a boil then reduce to low so that the mixture just barely bubbles. Check for doneness at about the 15-20 minute mark. Cook just until tender and the skins have not started to peel off. Be careful to keep heat low and that they don’t stick. If they start to stick before they are cooked, add another ¼ cup of water and keep cooking. Also be careful not to mix around too much so they don’t break apart.

  • Cut the potatoes in half and transfer to a large bowl. Add the olive oil and crushed red pepper. Tear the remaining rosemary and thyme sprigs into 1-inch pieces and add them to the bowl along with the remaining garlic. Season with salt and toss. Arrange the potatoes cut side down on 2 large rimmed baking sheets; add any herbs, garlic and oil left in the bowl. Roast for about 25 minutes, until the potatoes are golden and crisp, shifting the pans halfway through baking. Discard the garlic and herbs. Transfer the roasted potatoes to a platter, sprinkle with the parsley and serve.
