BOURBON-GLAZED HAM

This is a delicious combo of about five recipes I found while researching for my first Thanksgiving ham. The empty baking pan afterwards was my best compliment!

Bourbon-Glazed Ham image

Steps:

  • Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
  • Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

Bourbon-Orange Glazed Ham image

Steps:

  • Mix together butter, brown sugar, and mustard powder.
  • Bake ham, wrapped in heavy paper towel, for 2 hours at 325 degrees. Remove paper towel; cut off fat, then score the ham.
  • Rub butter mixture all over the ham.
  • Stir bourbon and orange juice together.
  • Pour half of the o.j. and bourbon over the ham.
  • Continue to bake ham another 45 minutes, basting every 15 minutes with remaining o.j. and bourbon.

Maple Orange Bourbon Glazed Ham image

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the ham on a roasting rack in a roasting pan with the fat-side up. Use a small knife to lightly score the fat in a crosshatch pattern, taking care not to cut into the meat. Add about 1 cup of water to the bottom of the pan. Bake the ham for 45 minutes.
  • Meanwhile, make the glaze. Combine the marmalade, bourbon, maple syrup, butter, cinnamon and cloves in a small saucepan over medium-low heat. Cook, stirring often, until the glaze is thick and syrupy, 20 to 25 minutes.
  • Brush the ham with about half of the glaze and return to the oven. Roast, glazing the ham every 15 to 20 minutes, until the internal temperature reaches about 130 degrees F, 45 minutes to 1 hour more. (The ham will get very brown, but if the glaze starts to burn, tent with a piece of foil greased with cooking spray. Let rest, tented with a piece of greased foil, for about 10 minutes before carving.

One 7- to 8-pound bone-in spiral cut ham
1 cup orange marmalade
1/2 cup bourbon
1/2 cup maple syrup
2 tablespoons unsalted butter
Pinch ground cinnamon
Pinch ground cloves
Nonstick cooking spray, for the foil

Steps:

  • In a large bowl, whisk the first 4 ingredients. Add ham; turn to coat. Cover and refrigerate 8 hours or overnight, turning occasionally., Preheat oven to 325°. Remove ham from marinade and place on a rack in a roasting pan; reserve remaining marinade, placing it in the refrigerator until ready to baste., Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. Bake, covered, 2 hours., Baste with about half the reserved marinade. Bake, uncovered, 1 to 1-1/2 hours, basting the ham twice more during the first half hour, until a thermometer reads 140°.

  • Removing the rind from the ham is optional. If you do not plan to remove it, skip to the next step of scoring the surface.
  • To remove the rind from the ham, slide a paring knife under the rind on the cut face of the ham to loosen the rind from the layer of fat. Slip your fingers under the loosened rind and pull it back, use the knife as needed to cut away the rind.
  • With a sharp knife, score the surface of the fat/rind in a diamond pattern, without cutting into the flesh of the ham. Stud each diamond with a whole clove. An ice pick or a wooden skewer can be used to puncture a hole in the fat before inserting the whole clove.
